Honey Glazed Carrots

   As you can probably tell by now, we eat a lot of frozen vegetables with our meals.  Warm them up, add a little salt and pepper and plop them on your plate.  Nothing too exciting, but it gets the job done.  I thought it would be fun to do something a little different with our ham the other night.  So, I glazed some carrots in honey, coconut oil and spices.  The sweet carrots were a perfect accompaniment to the salty ham.  A few potatoes and the meal was done!

    We really enjoyed having a little something different than our normal green veggies with dinner.  These made an excellent finger food for Jax and added a little variety to our dinner routine.  We planted some carrots in the garden, so I can't wait to try it with home grown carrots!

Honey Glazed Carrots


2 T coconut oil
2 T honey
2 T water
1 lb baby carrots
1/2 tsp cinnamon
1/2 tsp ginger
1/2 tsp salt
dash or two of pepper

  1. Place coconut oil, honey, water and carrots in a sauce pan.  Cook covered over medium-low heat for about fifteen minutes or until carrots begin to soften. (You don't want to cook them to mush)
  2. Remove lid, and stir in spices.  Cook until liquid thickens to a glaze.  
  3. Serve warm
