Honey Glazed Carrots

Honey glazed Carrots with a bit of cinnamon are a great side dish. They are a little bit sweet and a little bit salty and go with just about anything.

A kiss of honey and sprinkle of cinnamon helps to accentuate the natural sweetness of these carrots. Not to mention the glaze gives them that lovely sheen! 

This is the perfect way to get your family to eat vegetables without complaining.  The recipe is simple, the results are flavorful. It’s a win-win!

As you can probably tell by now, we eat a lot of frozen vegetables with our meals.  Warm them up, add a little salt and pepper and plop them on your plate.  Nothing too exciting, but it gets the job done.

I thought it would be fun to do something a little different with our ham the other night.  So, I glazed some carrots in honey, coconut oil and spices.

The sweet carrots were a perfect accompaniment to the salty ham.  A few potatoes and the meal was done!

We also enjoy them with BBQ, roasted turkey, chicken and more.  They really go with just about anything.

We really enjoyed having a little something different for our vegetable side dish with dinner.  These made an excellent finger food for Little Dude and added a little variety to our dinner routine.

We planted some carrots in the garden, so I can’t wait to try it with home grown carrots!  You don’t have to use baby carrots, you can just thick slices of carrots as well.

Feel free to make some adjustments to match what you like or what you have on hand.  Use butter instead of coconut oil.

You could also sub in maple syrup for the honey, what a delicious option! For a really fun twist, try Chinese five spice instead of the cinnamon or a dash of nutmeg instead of the ginger.

That is the fun part about recipes! Make them as they are written the first time and then tweak them to your liking.

Play with them, change them, make them your own.  Or maybe you love them the first time and that’s the only way you ever want to make them.

Either way, each take gets you a little closer to that new favorite. Maybe even closer to a new family tradition.  You never know which one is going to be the one that sticks around forever!

Honey Glazed Carrots

Carrots glazed with a bit of honey and cinnamon are a great side dish. A little sweet and a little salty, they make the perfect vegetable for Easter, Thanksgiving, or any dinner!
Prep: 2 minutes
Cook: 20 minutes
Total: 22 minutes

Ingredients 

  • 2 Tablespoons coconut oil or butter
  • 2 Tablespoons honey
  • 2 Tablespoons water
  • 1 pound baby carrots
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon salt
  • dash or two of pepper

Instructions 

  • Place coconut oil, honey, water and carrots in a sauce pan. Cook covered over medium-low heat for about fifteen minutes or until carrots begin to soften. (You don’t want to cook them to mush)
    2 Tablespoons coconut oil, 2 Tablespoons honey, 2 Tablespoons water, 1 pound baby carrots
  • Remove lid, and stir in spices. Cook uncovered until liquid thickens to a glaze.
    ½ teaspoon ground cinnamon, ½ teaspoon ground ginger, ½ teaspoon salt, dash or two of pepper
  • Serve warm
