Warm & Cheesy Kickin' Corn Dip

This warm corn dip is creamy, cheesy, gooey and good! There is just a little bit of spicy kick and of course a little bit of bacon too. Grab a tortilla chip and dig in.

     This creamy dip is loaded with corn, bacon and cheese.  There is just a bit of spice that adds to the great taste. It is absolutely perfect with tortilla chips.  Make it for a BBQ, potluck or party.  It is a hit with our crowds every time we serve it!

    I don't know about you, but I am a sucker for dips. That is especially the case if they are warm and cheesy.

     Chips with salsa and guacamole could easily become the meal for me. Veggies and clam dip never last long at one of our family gatherings either.

     But if you really want to lure me in, serve up a hot cheese based dip. I'd follow you anywhere for some good queso!

      That is why spinach artichoke dip is always a hit. Pulled pork dip and cajun shrimp dips are always a hit with guests as well.

     But this corn dip is probably the one I have made the most in the last five years. I can't wait for you to make it and fall in love too.

     It has that great mix of savory cheese and bacon with the slightly sweet corn. A smattering of bright fresh herbs on top adds to the flavor explosion.

    A salty tortilla chip is our favorite way to dig in, but pita chips would be another wonderful option. You could even dive in with a thin slice of baguette or some veggies. If you use something different please let me know how it goes.

    I originally shared this recipe in 2015. It was a hit then and still is now.

     We have enjoyed it several times over the years, so I figured the post was overdue for a makeover. Hopefully the additional information and video will help convince you to whip up a batch soon!

   Beware: this dip is addictive!  I knew I wanted some sort of fun dippy appetizer for our pecan pie throw down and shrimp boil.

   I didn't want people to exhaust themselves playing yard games and have nothing to eat but pie. Wouldn't that be terrible?

    I had it in my head I wanted to do something in a cast iron skillet, that way I could be flexible about whether I wanted to do it in the house or over the fire.  Besides, I just think it is fun to serve something in cast iron, especially when you are serving things like pecan pie and shrimp boils!

    So, I did what you do when you ideas of something fun to make... went to Pinterest.  There were a lot of great ideas, but none of them were exactly what I wanted.

    So, I took note of a few things that looked interesting and gave it a tweak to make it more what I had in mind. That is how this recipe was born.

    This dip is good.  Everyone was raving over it... and it wasn't due to lack of tasty options!  My uncle immediately asked for the recipe.

     Our friend Sam likes to tell me his favorite dish after a party, and this won in his book.  That's right, it was better than shrimp and pie!

    It was up there in my book too.  It was creamy and full of flavor.

    The jalapeno gave it just enough heat and melty cheese is always great on a crunchy tortilla chip!  The sweet corn and smoky bacon gave it a really nice balance and the herbs kept it fresh and delicious.

    I am sure we will be making this again.  It will be perfect for football season!

How do I adjust the spice level?

Jalapenos can be hit or miss on how hot they are. Even in one batch of stuffed jalapenos, all from the same plants, some will be mild and some will be eye wateringly spicy.

So unfortunately it can be a bit of a roll of the dice. However there are some things you can do to help ensure you get the right spice level.

If you want to keep your dip super mild, use a can of chopped green chilies instead of the jalapeno. That keeps it easy and assuredly on the milder side.

Removing the ribs and seeds from the jalapeno will help keep it less spicy as well. Just leave them in if you want to turn up the heat a notch.

For a spicier dip, toss in a second jalapeno. Or allow your guests to add a little extra heat on their own by serving some pickled jalapenos along with it.

Kickin' Corn Dip

This creamy dip is loaded with corn, bacon and flavor. There is just a bit of heat that adds to the great taste. It is absolutely perfect with tortilla chips. Make it for a BBQ, potluck or party. It is a hit with our crowds every time we serve it!

  • 1/2 pound bacon
  • 8 ounces cream cheese, softened
  • 1 jalapeno, diced (I left the seeds and ribs for some kick, but you can remove them)
  • 1 pound frozen corn, thawed
  • 8 ounces Monterey jack cheese, shredded
  • 1/2 cup sour cream (or plain yogurt) 
  • 1/2 teaspoon garlic powder
  • 1/4 cup cilantro, chopped
  • 1/4 cup green onion, chopped
  • Tortilla chips for serving


  1. Preheat oven to 400 F
  2. In an oven-safe skillet (I have used both a 9 and 12" cast iron skillet and both worked great), cook the bacon until crisp. Remove bacon, set aside to cool. Drain most of the bacon grease, leaving just enough to coat the pan.
  3. In a bowl, stir together cream cheese, jalapeno, corn, shredded jack cheese, garlic powder and yogurt (or sour cream). Fold in chopped bacon.
  4. Spread in skillet and bake for 20 minutes.
  5. Remove from oven and sprinkle with chopped herbs. Serve with tortilla chips.
