Lemon Texas Sheet Cake With Raspberry Glaze - Guest Post by MiMi

     I have been enjoying the ease of making Texas sheet cakes lately.  I love that I can just pull the ingredients together last minute and get to work.  I don't have to take the time to let the ingredients come to room temperature.  I wanted to make something that would taste fresh for an outdoor barbecue.  Lemon and raspberry is a nice combination for summertime.  I used frozen raspberries, but you could use fresh raspberries if you have them.

Lemon Raspberry Ice Cream - A Guest Post by MiMi

   I came up with a recipe for a lemon raspberry Texas sheet cake.  I had extra lemons and raspberries so I decided to make ice cream to go with it.  These two flavors go really well together and made for a very refreshing dessert. It seems to be that I have a new hobby.  I really enjoy coming up with new flavors of homemade ice cream.  My family seems to be willing taste testers.

Raspberry Glaze

   MiMi made up this recipe to go with her Lemon Texas Sheet Cake and Lemon Raspberry Ice Cream.  She used 3/4 of the recipe for the cake and the other 1/4 for the ice cream.  It would also be great drizzled over vanilla ice cream, or on your favorite chocolate bundt cake.  Heck, it is good on a spoon if you are desperate!

Jenny's Grilled Pork Loin With Bacon

     My Aunt Jenny and Uncle Jim have been making this pork loin for a number of years now.  They have made it for us a few times and every time it has been delicious!  We even had it for Christmas dinner one year.  With the meat going on the grill, you can fill the oven with fabulous sides!

   I hereby vote that we created a cute name for peanut butter, banana and honey.  You know, like fluffernutter only not.  Make sense?!  Lets throw out some ideas!  It seems like there has to be a better way to describe this recipe than spell out each ingredient.  I mean, that is a LOT of letters!

Elvis Sheet Cake

    I have had this idea in my head for a while now.  Have you ever just stewed on something you want to make like that?  I have been so anxious to make it, but haven't had the right opportunity.  I try not to make desserts for just the three of us.  Matt usually doesn't eat dessert multiple days in a row.  I however have no problem eating dessert multiple meals in a row.... it's a gift.  Try not to be too jealous!

  MiMi was having a family get together and she knew she wanted to make a s'more themed dessert for the kids.  Of course the adults loved it too!  The s'mores ice cream MiMi made was the run away hit of the evening.  These bars were popular too.  Sometimes quick and easy yields really tasty results!

Lemon Cream Popcorn

   Matt's cousin Chris made some lemon white chocolate popcorn a while back.  Her family loved it, but she said it was a little hard to make.  She sent the recipe and suggested we try it.  Chris's suggestions have all been winners so far.  Her baked General Tso's Chicken was delicious and her healthy pumpkin ice cream didn't make it through the day.  So, I knew I had to make this recipe as well.

Blackberry Crisp

Berries and a sweet, crunchy oatmeal topping are just meant to go together! Serve this blackberry crunch with some vanilla ice cream or freshly whipped cream for a summertime dessert win!

    Our blackberry bushes are in full production right now!  We were lucky enough to have a patch of thornless vines going already at this house when we moved in, and this year is looking to provide a bumper crop.  The only problem is it feels like it has been raining non-stop for months.  The lack of sunshine has lead to berries that are a little more tart than normal.

   Jax and I were really enjoying our extra time together on my week off.  Matt was able to take Thursday and Friday off as well, so we had some extra fun family time.  We fed some fish, road bumper boats and took Jax creeking for the first time.  Of course any good trip to play in the creek should include a picnic and any good picnic should include brownies!

Marlene's Sour Cream Cookies - Traditional Dropped Version

Sour cream cookies are simple, soft and oh so good. We fell in love at first bite so many years ago and they are still a favorite!

    These little nuggets are the softest cookies you can imagine.  My Aunt Marlene made these for us for the first time when we were still small kids.  We had never eaten cookies quite like them!  They are still very much a family favorite and go quickly when Marlene makes them.

Donna's Mediterranean Orzo Salad

  While we had extra people in town for Grandma's birthday, MiMi and Pops thought it would be fun to have a little cookout.  We played some ladder golf and stuffed ourselves with some really good food.  Pops made some excellent pork chops on the grill.  He tried a new to us sauce, Blues Hog honey mustard.  MiMi bought it in a sampler pack and we all LOVED it.  We also had Pops' homemade deer sausage, a variety of cheese and crackers.

MiMi's Vanilla Ice Cream

    MiMi is famous for her ice cream.  One summer a few years ago, she made a different batch of ice cream every day.  I mean really.  EVERY DAY!  So she knows her way around an ice cream maker.  She tried every different type of recipe she could get her hands on.  She loves to make her ice cream in the Kitchenaide attachment.  But you can use whatever ice cream maker you like best.

   So you may remember a while back my Aunt Jenny gave me a jar of tahini as a secret ingredient challenge.  She wanted me to make something with it that wasn't hummus.  So, my first recipe was tahini cookies that were delicious.  But I knew I wanted to make some sesame noodles too.  I threw in some veggies and chicken to make a meal out of it.

Chocolate Peanut Butter Sheet Cake

   We love the combination of peanut butter and chocolate.  So, when MiMi was looking for something to make for a family BBQ she knew this would be a winner.  We have really been on a sheet cake kick and we are yet to find one that disappointed us.  MiMi served the cake with homemade vanilla ice cream drizzled with more peanut butter and chocolate.  Even those that were trying to resist dessert couldn't last long once they saw what we were having.  Everyone gave in and went home happy!

Maple Peanut Butter Krispie Treats

     These krispie treats will knock your socks off.  I had a long day of driving and a sudden craving for rice krispie treats.  I don't keep marshmallows in the house though, so I needed to go to plan b.  I found a lot of recipes that used peanut butter and honey, but I knew I wanted to use Marlene's fudge frosting (that was actually what I was craving, the krispie treats are just my favorite vehicle for eating it) and didn't want the honey and the chocolate competing.  So, I created these instead.

Marlene's Fudge Frosting

Super simple and really fudgy, this frosting is the perfect topping for brownies, rice krispie treats and skillet cookies!

    Today is my Aunt Marlene's birthday!  Happy birthday, Marlene! (It is also my cousin/goddaughter's birthday.  Happy birthday, Em!)  In celebration, I thought I would share one of my favorite recipes of Marlene's. But I am going to warn you, this frosting is addictive.  The worst part is once you realize how easy it is, you won't be able to stop making it (and licking the spoon, and the pan, and your fingers...)

     Little Dude's daycare closed for the week so his daycare providers could take a well earned vacation.  So, the little guy have been getting some extra quality time.  We have played lots of trains, tractors and blocks.  We have been working on potty training (fingers crossed) and he has been helping my with some recipe development.  He loves to help and is an excellent stirrer and dumper!

Maple Bacon Ice Cream - A Guest Post by MiMi

   For family dinner this week we had breakfast for dinner.  I made breakfast patty melts.  Family dinners always include dessert.  I wanted to make a dessert that had breakfast flavors but I have been on an ice cream making kick.  It seems homemade ice cream is a family favorite.  That's when I came up with the idea of making a maple and bacon flavored ice cream.  I love these two ingredients together.  I adjusted my vanilla ice cream recipe in a way I thought would be good and was pleased when it worked out.  This makes a nice smooth ice cream.
