Little Dude's daycare closed for the week so his daycare providers could take a well earned vacation. So, the little guy have been getting some extra quality time. We have played lots of trains, tractors and blocks. We have been working on potty training (fingers crossed) and he has been helping my with some recipe development. He loves to help and is an excellent stirrer and dumper!
We had a really good time making this. We had an even better time eating it. Jax kept wanting me to take pictures of his bowl. I guess that is the life of a food blogger's kid. He knows there need to be plenty of pictures of the food we eat. Of course I snuck in a few of him too. He doesn't like me taking his picture, but he loves to see pictures of himself once they are taken! He is so funny.
This oatmeal will bowl you over. The best part is that even though it tastes really decadent, it is really pretty healthy. It really puffs up as you bake it and you end up with a consistency more like pudding than the dense baked oatmeal you might be thinking of. It is puffy, chocolaty, gooey and delicious.
It is magnificent while still warm, but it is also really tasty at room temperature. If you really want to kick it up a notch, a dollop of whipped cream would be great. While you are at it, how about some chocolate shavings too? We had ours plain, but now I am thinking we missed a real opportunity!
Yield: 4 servings

Hot Cocoa Baked Oatmeal
prep time: 10 MINScook time: 25 MINStotal time: 35 mins
ingredients:
- 1 cup milk
- 1/2 cup cocoa
- 1 cup rolled oats
- 1/2 tsp salt
- 1/2 cup maple syrup
- 2 eggs, beaten
- 1/2 cup plain low fat yogurt
- 1 tsp almond extract
- 1 tsp baking powder
instructions
- Preheat oven to 350 F
- Grease 4 6 oz ramekins and place on a baking sheet.
- Mix together all ingredients and pour into greased ramekins.
- Bake for 25 minutes or until puffed and set.

DeleteYour little boy is adorable! My kids are the same way, it is a battle to get a pic of them but once I get it they are sneaking my phone all day to look at all the pictures :) We love oatmeal at our house and this looks like a delicious way of eating it!
