This is her favorite vanilla ice cream recipe. She knows it by heart. This is also the base she goes back to when she is making up something new and fun.
We enjoyed this batch with a slice of chocolate peanut butter sheet cake.
This is the perfect amount to fit in the Kitchenaide stand mixer ice cream maker attachment. It does contain raw eggs. So there is a small amount of risk associated with it. If you would like to leave them out, you can. But it will affect the texture some, making it a harder and a little less creamy and smooth.
Vanilla Ice Cream
Ingredients:
2 eggs
3/4 cup sugar
1 T vanilla extract
3 cups heavy cream
1 1/2 cups milk
- With an immersion blender, beat the eggs (MiMi does this in a ball jar) until they are light and foamy. This takes about a minute.
- Slowly add in the sugar, until well incorporated. (About two minutes)
- Add vanilla.
- In a large measuring bowl, mix together the cream and milk. Gently stir in the egg mixture. (you don't want to beat it at this point, the air is already added to the eggs)
- Pour into your ice cream maker and make according to your maker's directions. (It normally takes MiMi about 20 minutes in her Kitcheaide ice cream maker)
