This corn is soooo good. It is creamy and easy and cooks in the slow cooker freeing you up to do other things! It is a perfect side dish for almost any dinner and one the family is sure to love!
The first time I made it, I had done some hunting on Pinterest and found some great options, but as I multiplied them out the proportions got a little crazy. Most of them would have wanted me to use a pound of cream cheese and a half pound of butter for 2 pounds of corn. Don't get me wrong, I am sure it would have been delicious but it seemed a bit ridiculous!
So, I scaled back quite a bit and we ended up with something where you could still taste the corn but had a decadent creamy base to go with it. My brother Collin told me how good it was at least three times during dinner! We all loved it and there was almost nothing left at the end of dinner!
I love how easy it is to make. Just a few simple ingredients and a couple of hours in the slow cooker. It doesn't take any room on the stove or in the oven and you are free to work on the rest of dinner or have fun! Plus is goes well with so many things. It is perfect with pulled pork, or ham. It's great with grilled meat or would be fun with meatloaf.
I am always all ears for new ways to make vegetables exciting. We also enjoy corn in Mexican Street Corn Barley Salad and Kickin' Corn Dip. What are your favorite jazzed up veggie recipes?

Slow Cooker Creamy Corn
This corn is soooo good. It is creamy and easy and cooks in the slow cooker freeing you up to do other things! It is a perfect side dish for almost any dinner and one the family is sure to love!
prep time: 2 MINScook time: 2 hourtotal time: 2 hours and 2 mins
ingredients:
- 2 lbs. frozen corn
- 8 ounces Neufchatel cheese (or regular cream cheese)
- 1/2 cup butter
- 1/2 cup milk
- 1 T sugar
- 1 tsp salt
- 1 tsp ground pepper
instructions
- Dump all ingredients into your slow cooker (I used my 4 quart insert, I have this slow cooker with interchangeable crocks)
- Cook on high for one hour. Stir and cook for one hour longer.

I have a hard time with the canned stuff too. After having fresh and frozen it is hard to accept the canned, but I have a brother that likes it too. Those boys and their applesauce! I would gladly trade applesauce for a cake any day. Especially one that looks as delicious as that one!

DeleteMmmm! That looks good! One of my husband's favorite dishes is corn. I'm from the south and one of the things that my mom always had on the table was fried corn. It's really like cream style corn but you make it in an iron skillet.

DeleteWould this work as well doubled in a 6 quart crock pot? I don't have an oven right now, and we have covered dish every Sunday afternoon. I would love something I could dump into the crock first thing in the morning and it's done for lunch.
