I have really enjoyed hot chocolate week on Cooking With Carlee. Since I have tried to create a different fudge recipe for each special occasion this year, I decided to create a Hot Chocolate Fudge to celebrate the end of this week. To make it even more of a challenge for myself I decided to incorporate the two hot chocolate mix recipes that we created. When I was in my cabinet looking for the white chocolate chips I came across some Andes peppermint crunch baking chips and decided to include them for a Christmasy twist. They add a light peppermint flavor as if you stirred your cup of hot chocolate with a candy cane!

Hot Chocolate Fudge
Ingredients for the Hot Chocolate Layer;
1 T butter
2/3 cup sweetened condensed milk
2 cups semi sweet chocolate chips
1/3 cup hot chocolate mix
10 large marshmallows
1 1/2 tsp corn syrup
Ingredients for the White Chocolate Layer:
1 T butter
2/3 cup sweetened condensed milk
1 cup white chocolate chips
1 cup Andes peppermint crunch baking chips (can use all white chocolate chips if you'd rather)
1/3 cup white hot chocolate mix
10 large marshmallows
1 1/2 tsp corn syrup
Optional toppings: miniature marshmallows, Christmas sprinkles
- Line an 8x8 pan with foil
- Melt the butter, sweetened condensed milk and chocolate chips in a sauce pan over low heat. Stir until smooth. Add the powdered hot chocolate mix and stir it well. Stir in the marshmallows and corn syrup until completely incorporated. Pour into the prepared pan. Place in the refrigerator while you prepare the next layer.
- Place the butter, sweetened condensed milk, white chocolate chips and peppermint chips in a sauce pan over low heat. Stir until smooth. Add the marshmallows and corn syrup and stir until completely incorporated. Gently pour over the first layer.
- Let cool until hardened. remove from pan and cut into pieces.
My original idea was to make hot chocolate layer and then a while chocolate layer. Unfortunately , I only had one cup of white chocolate chips left so I came up with this tasty twist on that. 2 cups of white chips would work out perfectly too. MiMi
