
Did you ever think of turning hot chocolate mix into ice cream? Well now you can! It's a great way to use up what's left of the hot chocolate mix in the pantry and take it from a cold weather beverage to a hot weather frozen treat.
MiMi originally shared this recipe in 2015. We were on a hot chocolate bender that winter.
We made homemade hot chocolate mix and homemade white hot chocolate mix for everyone. Then she turned the extras into this ice cream and some cookies.

It was a fun way to spend some quality time together making it all and everyone enjoyed the resulting treats.
I thought it would be a good time to go back and freshen up the post. So I remade the ice cream, took new pictures and added a printable recipe card for your convenience.
I also altered the recipe just a smidge. MiMi's original recipe called for all cream.

It is delicious that way and super rich and creamy. I decided to sub in a little milk for some of the cream.
That saves on a few calories and makes it just a smidge less rich. Plus it freezes just a little faster and more solid.
You can easily revert back to the original recipe by turning the 1/2 cup of milk back into cream. Or try it both ways and let me know which you prefer.

We host Pops' receptionists and their husbands each year for a Christmas celebration. They take such good care of things at the office and we appreciate them so much.
I like to come up with an extra special meal for their Christmas party. This year, I decided to make one of my favorite meals, turkey casserole.

When you have such a good dinner it seems like you should serve a special dessert to go with it. None of them are big sweet eaters and I knew that they would be full from dinner so I decided on ice cream and cookies.
When deciding on flavors for dessert I was still quite excited about the hot chocolate mix and white hot chocolate mix that we made for hot chocolate week. I chose to make this hot chocolate mix ice cream and white hot chocolate mix cookies.
You can only imagine how thrilled I was when the one husband who never takes dessert saw what I was serving and wanted some.

Ice cream maker recommendations
MiMi has a couple kitchenaid ice cream maker attachments for her stand mixer. She loves them and makes all of her ice cream with them.
I recently got a cuisinart ice cream maker. You freeze the bowl ahead of using it much like the kitchenaid attachment.

I have only had it for a couple of months and have made several batches of ice cream already. So far so good and it doesn't take up a ton of room for storage, no more than a food processor.

MiMi's Hot Chocolate Mix Ice Cream
Super creamy homemade chocolate ice cream flavored with hot chocolate mix and marshmallows. It's a great way to use the extra hot cocoa mix in the pantry and transition it from a winter to a spring treat.
prep time: 2 H & 15 Mcook time: total time: 2 H & 15 M
ingredients:
- 2 1/2 cups heavy cream
- 1/2 cup whole milk
- 1 14 ounce can sweetened condensed milk
- 1/4 cup sugar
- 1/2 cup hot chocolate mix
- 1 tsp vanilla extract
- 1 cup mini marshmallows
instructions:
How to cook MiMi's Hot Chocolate Mix Ice Cream
- Using a whisk or an immersion blender, mix the first five ingredients together until well blended. Do not over mix.
- Place this mixture into the bowl of your ice cream freezer (MiMi still loves the Kitchenaid attachment) and process as recommended.
- When the mixture is done churning, remove from the bowl of your ice cream freezer and fold in the miniature marshmallows.
- Store in a freezer safe container. Remove from the freezer about five minutes before you're ready to serve to let it soften just a little bit. Serve.

ReplyDeleteI don't make ice cream mostly because I can't be trusted with a whole batch to myself. Plus MiMi does such a great job. If she ever stops, I'll have to start doing it myself. In the meantime I let her be in charge of making fun ice cream flavors. This one was particularly good!
