Easy Crockpot Peanut Clusters

Easy crockpot peanut clusters only take a handful of ingredients to make. They have a creamy chocolate coating with bits of toffee and plenty of peanut goodness. If you can stir, you can make these tasty candies.

If you like sweet and salty, creamy and crunchy treats, these slow cooker peanut clusters are for you. They have hints of toffee, peanut butter and vanilla with plenty of peanuts and chocolate.

Top them with a few sprinkles to make them extra festive. We like adding red, white and green sprinkles for Christmas but there’s no reason you couldn’t use different colors for other holidays and occasions.

When it comes to Christmas treats, these are always a favorite. They are so easy to make and don’t take any oven space when you are baking batch after batch of cookies.

Tips for Making Slow Cooker Peanut Clusters

It may be hard to believe, but chocolate can actually scorch in the slow cooker. It can even happen with the heat on low.

So you want to make sure of a couple things to prevent that from happening. The first is to make sure the peanuts are on the bottom of the Crockpot.

The second is you want to use almond bark or candy coating for some of the chocolate. I used the vanilla almond bark here, but you can use the chocolate if you want richer chocolate flavor.

Almond bark has extra palm or vegetable oil in it which helps it to withstand slightly higher temperatures. Add this right above the peanuts to allow it to take the next most amount of heat.

A mix of chocolate chips and peanut butter chips goes in next, then some toffee bits if desired. You can leave the toffee out if you want but I like the depth of flavor and buttery richness they add to the mix.

Don’t stir, just put the lid on your crock and let it cook on low for about 20 minutes. Then give it a quick stir and continue cooking it on low until the chocolate is all melted, stirring every 5-10 minutes.

That’s it! All there is left to do is scoop the mixture onto wax paper or parchment paper and top with sprinkles if you so choose.

Let them sit in a cool space until they are set and then place in an airtight container until you are ready to eat them. They will be fine for several weeks if stored in a cool room.

Slow Cooker Peanut Clusters

Ingredients
 

  • 4 cups peanuts 32 oz.
  • 16 ounces almond bark
  • 1 cup chocolate chips
  • 1 cup peanut butter chips
  • Optional: 1 cup toffee bits and/or a couple of Tablespoons sprinkles

Instructions
 

  • Layer all of the ingredients (except the sprinkles) in your crockpot in the order listed.  The crockpot that I used is 6 quarts.  
  • Cover and cook for 20 minutes on low.  
  • Stir and cook for another 5-10 minutes.
  • Continue cooking and stirring every 5-10 minutes until the chocolate is melted and smooth.  
  • Using a small cookie scoop, scoop out about a Tablespoon of candy and place on parchment paper making sure to leave space between each scoop. Top with sprinkles if desired.
  • Allow to set completely before storing. 

Notes

This recipe works with either dry roasted peanuts or cocktail peanuts.
We use vanilla almond bark, but for a richer chocolate flavor you can use the chocolate flavored version.

A Christmas Poem by MiMi

‘Twas the week before Christmas, when in MiMi’s house
She had a dusting of flour all over her blouse.
The sweets in her sunroom just weren’t quite there,
There are traditions to keep to show my family I care.
With cookies and candies my loved ones want fed,
“I must get these baked,” to her husband she said.

“Our children look forward to chocolates and nuts,
And there must be some Chex mix- No ifs ands or buts.”
So onward she trudged with this baking and chatter,
The messes she made just didn’t matter.
Around the kitchen she ran in a flash,
Keeping an eye on the cookies or they’d burn into ash.

There’s a strawberry shortcakepien almost ready to go,
And white hot chocolate cookies down below.
When what to her wondering eyes should appear,
But a new recipe to try for those MiMi holds dear.
Of course, she must change it a wee little bit,
So into her crockpot the ingredients will fit.

There’s peanuts, three chocolates and peanut butter chips,
Oh, she hopes all these sweets won’t go to her hips.
At this rate she’ll never get to her bed.
But another new recipe just popped in her head.

For white chocolate peanut butter candy nests
This new treat just might be the one they like best!
 Now chow mein noodles!
Now peanut butter!
Now white chocolate chips!
On miniature marshmallows!
On peanuts! That’s it.

Into the crockpot the ingredients must fall,
These will be loved by her family and all.
 As Christmas time is drawing near,
 She is beginning to realize there’s nothing to fear.

The candies are dropped in nice little mounds,
And those that she dipped are sure to astound!
 Then in a twinkling, Pops came into the room,
And offered to clean with a dustpan and broom.

 MiMi was happy as she turned around
And a sweet little kiss on Pops’ cheek could be found.
 She was dressed in her apron from her chin to her toes,
And she even had chocolate on the tip of her nose.
Now her sunroom was full of many good sweets,
And Pops had the kitchen all tidy and neat.

His eyes, how they twinkled, when the thought entered his head,
MiMi would soon be getting ready for bed.
His cute little smile was hard to hide,
Which cookie to try would be hard to decide.

Biting his tongue to disguise his smile,
He hoped to be alone in a very short while.
She laughed when she saw him, in spite of herself,
He looked like a sneaky version of Santa himself.
A wink of her eye let him know he had nothing to dread,
And a plateful of treats Pops soon would be fed.

He spoke not a word, but went straight to the table,
And ate them all as soon as he was able.
He placed both his hands on his happy full tummy,
And told MiMi that each sweet was so yummy.

I had so much fun with the poem that I neglected to share why I have enjoyed making candy in the slow cooker this year. I haven't used my crockpot for candy before but will from now on. I was able to be free to bake a batch of cookies without even thinking about what was in my slow cooker. When the timer went off I gave it a quick stir and moved on. If I wasn't free exactly when it was done cooking that was ok too. It stayed warm in the crockpot until I was ready. I really enjoyed that.
