Raspberry Sorbet (with honey) - Mondays with MiMi

     I'm sure you have heard the saying that great minds think alike.  I guess that it's true.  When I got out the pink velvet ice cream with cream cheese frosting at our Valentine's Day get together both my husband, Pops, and son-in-law, Matt, were excited that I had made raspberry sorbet.  It baffles me how they both incorrectly thought I had made raspberry sorbet and were excited it.  As it turned out they both liked the ice cream that night but I knew I would be making raspberry sorbet for our next get together.

Easter Eggstravaganza 2016

  We love our new tradition of having an Easter open house the day before Easter.  It is a great way to get all of our family and friends together, have some good food and a little egg hunt.  Plus it gives us an excuse to stay in and not get out of our jammies all day Easter if we want! ;-)

Ham, Broccoli and Cheese Pot Pie

This pot pie is a great way to rework your leftover ham.  Broccoli and cheese are a perfect way to bring it all together in a delicious one dish dinner!

    We love getting hams all year long.  My husband takes a sandwich to work for lunch each day and fresh sliced ham is so much better than the deli cuts.  Not to mention it is great with eggs and some potatoes for dinner, or made into breakfast chimichangas.  You can cut it into chunks and stir it into your macaroni and cheese too.  And of course there is ham and bean soup!  This pot pie is one of my favorite ways to use up some leftover ham though.

    I have had the best time coming up with fun recipes to make for our Easter get together.  It is one of my favorite parties to host.  I love having all of our local family and friends over for an egg hunt and lots of food!  We do it the day before Easter and then we take it easy and feast on leftovers on Easter itself.

Strawberry Orange Sorbet - Monday With MiMi

    I made a strawberry crumble for dessert and had extra strawberries.  I just couldn't resist trying another sorbet after the raspberry sorbet was such a hit.  To change things up a little, I decided to use orange juice as the liquid this time.  The flavors of the strawberries and orange juice went really well together.  Sorbet might be a new family favorite.  I heard one person say they liked this even better than the raspberry sorbet.  Others like the raspberry sorbet best.  Time to create a new flavor to add to this debate.

Mocha Whipped Cream

Fluffy whipped cream spiked with coffee and chocolate.  It is a great frosting for cakes, topping for cheesecakes or would be great floating on your cup of coffee.

     This mocha whipped cream is all of the best parts of your favorite expensive coffee drinks in whipped cream form.  In fact, I think there is more coffee flavor in this whipped cream than there is in a mocha and one of those places!  You will be amazed how much coffee and chocolate punch this packs while still being a light and fluffy whipped cream.

Classic Shortbread Cookies

    You may remember from my post on krumkake, my grandma has quite the assortment of kitchen gear and gadgets!  As we were gather up her bean pots, we stumbled upon a shortbread pan.  With St. Patricks' Day on the horizon, she sent it home with me saying I needed to make a batch for St. Patty's.  Though shortbread and the thistle this pan molds onto each cookie seem to be more Scottish than Irish, when your grandmother tells you to do something you better do it!

Cherry Quinoa Salad

This cherry quinoa salad is full of flavor and great textures.  It is a fun way to change up your side dish game!

     So here is the story with this one.  I was working on some recipes for our Easter brunch.  I knew I wanted a salad on the menu and the Caprese Quinoa Salad was a hit last summer.  Of course there are no decent tomatoes this time of year so it wouldn't be that easy.  My favorite green salads are full of fruit, nuts and cheese.  So it made sense I would go that route on this salad as well.

Betty's Mustard Brown Sugar Glazed Ham Balls

    A couple of month's back Val from Corn, Beans, Pigs and Kids shared a recipe for Iowa Ham Balls.  I had never heard of such a thing, so I couldn't help but to share it on my Facebook page to see if I was the only one.  After all, Iowa is just 45 minutes away from me, how had these passed me by?!  Our friend Lindsey's mom, Betty, chimed in saying ham balls were a family favorite of theirs.  Of course now I was even more intrigued.

Cherry Berry Pie- A Pi(e) Day Edition of Mondays With MiMi

     This is the second pi day since Carlee started Cooking With Carlee.  I had fully intended on making this pie to celebrate last year but I got sidetracked and did not do it.  I was determined to share one of our favorite pies with everyone this year.  This recipe was found a long time ago in one of my Taste of Home magazines.  It has been made many times for special occasions in our family.

     After weeks of talking about it, it was finally time!  Grandma and I were looking through all of her kitchen gadgets a little while back.  She has at least one of everything!  Need an electric crepe maker?  She's got it!  Want a vintage toaster (like really vintage with cages for the toast that you have to flip to toast both sides)?  She's got one.  Want an ebelskiver pan? She has two.  Vintage bean pots? Yep, three!  And that is just the start.

Easy (and Egg-Free) Macaroons

      When I was deciding what to include in Ro's meal delivery, I just knew there had to be macaroons.  I had made some delicious chewy coconut macaroons a few weeks before and she raved over them.  Those macaroons were egg white based which gave them a delicious fluffy airiness amidst the dense chewy coconut.  I couldn't make the exact same recipe again, so this time I went with what seems to be the more popular version of macaroons.  Making macaroons with sweetened condensed milk makes them a bit easier to do.  There are no eggs to separate and no whites to whip.  These come together in just a couple of minutes with no special equipment.

Strawberry Crumble Bars - Mondays with MiMi (a day late!)

    Spring is on the way and I've been seeing some really nice strawberries at the store.  I just couldn't wait for strawberries fresh from the garden so I picked some up.  Pops really likes crumbles so I thought I'd spoil him with a good strawberry crumble.  I served it at our weekly family dinner.  Everyone who ate some really liked it.  Would you believe we have a family member or two who don't like strawberries?  Since I purchased so many berries I decided to make a strawberry orange sorbet to go with it.  Matt and Pops have encouraged a new dessert trend for me after the raspberry sorbet idea.

Crusting Buttercream

   This buttercream is light, fluffy and great for piping.  It forms a nice crust making it good for holding its shape, traveling and keeping those details sharp.

      We all know by now that I love frosting.  Especially super soft and fluffy frosting. Or really dark and fudgy, but that is a whole different subject altogether!  I also love my butter.  I love the taste, texture and idea of butter.  I love the way butter works in frosting.  But sometimes you have to do things a little bit different in order to get the results you want.  In this case I wanted my buttercream to form a bit of a crust.  I know, crazy right?

Linda's Classic Cream Cheese Frosting

    You have to have a great recipe for classic cream cheese frosting.  It is a must in any baker's arsenal.  It comes together quickly and is perfect for so many kinds of cake.  Baking a carrot cake?  You have to have cream cheese frosting!  Need something for your chocolate cake?  Cream cheese frosting!  Making a strawberry cake?  Wouldn't it be lovely with some cream cheese frosting?!   You get my point.  Anyway, this is easy and delicious and a must make in any kitchen!

Strawberry Cheesecake Baked Oatmeal

  My live is complete, there is now a great excuse to have cheesecake for breakfast!  Jax and I have been having so much fun playing with oatmeal recipes.  There are just so many delicious ways to change it up and we both love eating the results.  Rather than a dense baked oatmeal, we have been on a big almost fluffy baked oatmeal.  Stir in some berries and a cheesecake swirl and you are in breakfast heaven.
