This one pan dinner is a great way to use up leftover pulled pork.  The rice soaks up so much flavor as it cooks and there are almost no dirty dishes. 

This recipe gets dinner on the table quickly and is a delicious way to feed your family.

Have you figured out by now we are pork people?  I know I have gone over my love of pulled pork many times.  I love how easy and versatile it is.

What I love even more is playing with the leftovers.  I have turned them in enchiladasBrunswick stew, even enchiladas in a delightful creamy cheese sauce.  All of which are delicious.

But sometimes you just don’t want the hassle of a bunch of dishes, yet you are just not in the mood for another pulled pork sandwich.  What’s a person to do?

 I have the solution.  It just takes one skillet, a few pantry ingredients and some leftover pulled pork.

It combines some Tex-Mex Flavors with BBQ for another Mexi-Q dish that is sure to be a hit!  The best part is that it comes together quickly and the cleanup is just as quick!

The only thing I love more than a good pulled pork recipe is a quick and easy dinner recipe.  You know, the kind that you can start when you get home from work and still have dinner on the table before your family chases you down like a pack of hungry wolves! This is definitely one of those. 

Other than a little chopping and stirring, there is very little effort required. When you put that skillet full of goodness down on the table and they smell the BBQ and see the golden melty cheese, everyone’s appetites will be ready to scarf it down!

Whipping up this skillet supper recipe

Luckily this dinner is super simple to make.  Other than a cutting board, there is just one pot to clean. It doesn’t get much better than that!

You start by sautéing some sweet or bell pepper along with an onion.  If you like some spice, you could add a diced jalapeno in with them.

Then add the pulled pork and rice.  Cook until the rice starts to toast a bit, it should just take 4-5 minutes.  After adding water, bring the mixture to a boil and then let it summer until the rice is almost cooked.

If you have a cover for your pan, use it. If you don’t have a lid, don’t despair.  Just keep an eye on it and add a little more water if it is needed.

Once the rice is cooked to al dente and the liquid is mostly absorbed, add the remaining ingredients.  Cook it for a few more minutes so that everything has a chance to cook through.  

Next add the cheese on top.  If your pan is broiler safe, but it under the broiler for a couple of minutes to melt the cheese.

 If you can’t put the pan under the broiler, just let it melt over the heat of the rest of the meal.  Top with chopped cilantro, chives, green onions or your favorite herbs if desired.

It is also great with chopped tomatoes and jalapeno slices.  Really any of your favorite toppings would be good!

What do you serve with this pulled pork and rice skillet meal?

We usually eat this as the whole meal. However, it would be great served with a green salad or coleslaw.

What do I do if I don’t have leftover pulled pork?

You can buy tubs of pulled pork at most grocery stores.  Or cook a pork shoulder and pull it just for the leftovers!

If you have some leftover bbq pork steak, you can chop them up and toss them in. They would work great!

Of course you can also use leftover chicken.  Either some grilled chicken, or just cook up some chicken breasts in the instant pot if you’d like. Then chop or pull them and toss them in this recipe instead of using pork.

In short, do whatever you need to do to get this dinner on the table! It is a flavorful meal that is sure to get gobbled up.

Ingredients
 

  • 1 Tablespoon oil
  • ¾ cup bell pepper chopped
  • ½ cup onion chopped
  • 2 teaspoon garlic powder
  • cups pulled pork
  • 1 cup rice
  • 2 cups water
  • 14.5 oz can diced tomatoes undrained
  • 15 oz. can black beans drained and rinsed
  • 1 cup corn kernels
  • ¾ cup BBQ sauce
  • ½ cup shredded cheddar cheese
  • green onions or cilantro for garnish

Instructions
 

  • Heat oil in large skillet. Add onions, peppers and garlic and cook until they start to soften. Season with salt and pepper

  • Add the pulled pork and rice to the skillet, stirring until the rice is lightly toasted.
    1 cup rice, 1½ cups pulled pork
  • Stir in the water, bring to a boil and then simmer for about 20 minutes. Add a little more water if necessary to keep it from drying out.
    2 cups water
  • Once rice is al dente, stir in black beans, corn, tomatoes, and BBQ sauce.
    14.5 oz can diced tomatoes, 15 oz. can black beans, 1 cup corn kernels, ¾ cup BBQ sauce
  • Top with cheese and cook until cheese begins to melt.
    ½ cup shredded cheddar cheese
  • If you’d like (and you have an oven safe skillet), broil until cheese is bubbly and starting to brown.
  • Garnish as desired.

Notes

I usually use defrosted frozen corn, but you can use drained canned corn or fresh corn if you prefer.

I couldn't tell if it was trying to be a bbq dish, or a Mexican dish. To me it was bland and dry. Would have been better with a pkg of taco seasoning and maybe red enchilada sauce. I served it over taco chips and added a dallop of sour cream and sliced jalepenos on top.

I made this but went a different direction. Did all you did but instead of BBQ, I used taco seasoning and made it a Mexican bake. Yummy. Family loved it.

I made this tonight and the only thing that I did differently was using some cooked, leftover yellow rice that I had in the fridge. I sauteed the veggies and then just added everything else in and it was fantastic! My husband and I loved it and we will be making it again...and soon!

Made this tonight and not sure if it was the ban I used but my rice still has a crunch but the flavor is spot on I used a bbq seasoned pork roast from Aldi we had sandwiches the first night and this the next night not bad for the $4 and change I paid for the roast just gotta figure out where I went wrong on the rice 😁

Well shoot. I am glad you liked it, but I am sure it would have been better with the rice cooked through. I am sure if you add a little more liquid and cook it a bit more, the crunch will go away.
