Falafel Waffles

Instead of frying your falafels, waffle them! You get crispy exteriors and soft interiors without the mess. It's a perfect Meatless Monday or Lenten meal too.

      This past week has been so much fun.  I love all of the lemon, yogurt and chickpeas we have been eating.  And then there's the homemade pita.  Mmmmmmm, so many homemade pita!   While we were at it, I figured this would be the perfect time to venture a little bit farther on our international culinary tour.

Yogurt and Tahini Sauce

     Our second batch of pita required a second sauce!  If the original batch of homemade pita had homemade hummus for dipping, the sourdough pita deserved something too.  I wanted something that could be drizzled over some falafel, would be good with cucumbers and tomatoes and would be a cool and creamy finish to wrapping all of that in a pita.  So this yogurt tahini sauce was born!

     The first thing MiMi asked when she saw that I made some homemade pita was "is that sourdough?"  It wasn't.  But it seemed like it would be a perfect use for sourdough.  It was so fun and easy to make that I figured I would give it another go.  So, I know it is my second pita recipe this week... but we ate them both within a week, so I figured it was ok to share them within a week as well!

Low Fat Tzatziki Style Orzo Salad

     Our Greek week would not be complete without something Tzatzkiki. I mean the cool creamy cucumber and yogurt sauce it what really makes a gyro.  I love it when they really pile it on there.  So I knew I had to make something like that for our Greek feast.  The thing is, I didn't really want it as a sauce or dip.  I wanted it to be it's own thing.  And that's when it hit me.  It would make a perfect pasta salad!

Lemon and Yogurt Marinated Grilled Chicken

      This chicken is really lovely!  It comes together super easily and the lemon and yogurt really make for juicy, tender and delicious chicken.  This was Matt's favorite part of the Greek inspired feast, I would guess.  It would be hard for me to pick between this and the pita bread (Hello, I'm Carlee and I'm a carbaholic).  He loves grilling anyway and really seems to like it even more when I come up with new marinades to try.  The char siu chicken we made for the poultry grill-off  has inspired him.  We still need to make that chicken again so we can get pictures and write a post... and he is already asking for this chicken again too.  Our "to make" list is always longer than our time to make it!

Delicious Semi-Whole Wheat Pita Flatbreads

Fresh homemade pita bread is easier than you think.  This dough is made with some whole wheat flour to make them a bit heartier and healthier as well! 

     Happy Monday morning to you!  I hope your weekend was lovely.  Ours was certainly a good one.  Somehow they are always busy, but I might as well accept that and move on right?  Luckily it was full of lots of family and plenty of good food.  We (and by "we" I definitely mean I) decided to have a Greek themed dinner.

Amazing Chanterelle Tart with Ricotta, Rosemary and a Phyllo Crust

This tart is so good! The crust is flaky and the mushrooms, wine and cheese were just meant to go together. If you can't find wild mushrooms, use whatever mushrooms you have. 

      Flaky phyllo crust, creamy ricotta filling and flavorful mushrooms all combined into one scrumptious tart. This savory treat is a perfect appetizer or serve a slice with some salad for a fancy lunch. It is full of flavor, texture and goodness!

No Bake Chocolate Cheesecake

     Sometimes you want something sweet.  Ok, I want something sweet all of the time.  But sometimes you you have to control yourself. Unfortunately.  It is what it is, we don't have to like it.  Anyway, during the summer it is nice to have some treats that are easy to make and don't require the oven.  This recipe only add 1/2 cup of sugar as well.  I am certainly not going to pretend it is holy. Or light. Or anything but delicious!  But I did make this as a lower sugar option.  My Paw-Paw is watching his sugar intake.  So when I made my sister the Chocolate Brownie Cheesecake With Mocha Whipped Cream that she requested for her birthday, I knew it would be nice to make something a little less full of sugar for Paw-Paw.

Mini Zucchini Loaves from Seattle

This great zucchini bread is the perfect balance of sweet and spice with a great crumb. You are going to love it!

    Guess what day it is.  It's Cake Slice Day again!  We are coming close to the end of baking our way through Maida Heatter's Cakes. And I think you may be surprised that I went with a loaf.  I normally pick the biggest most frosting filled choice.  There really wasn't an option like that this month, which helped point me in this direction.  Add to that the fact that I had some zucchini on my counter waiting to be used and zucchini bread happens to be one of my favorites and this choice was sort of a no-brainer!

Cori's Pasta Salad

    A while back, I asked my Facebook friends how they like their pasta salad best.  I am 90% sure that my cousin Cori responded saying she likes hers with pepperoni, cheese and Italian dressing.  That is it, pure and simple.  So when I was planning her baby shower, I went back to confirm that this was in fact the case.  I couldn't find the post anywhere!  How does it just disappear like that?!  Anyway, Cori, I hope I got it right!

    Update:  Cori has confirmed that this is her favorite pasta salad.  Sometimes simple and delicious is the way to go!

Samoa Smacky Delicious Mix

     I'll begin this post with a word of warning. This Samoa Smacky Delicious Mix is addicting.  You will innocently pick up the first piece just to give it a little try.  Then you will find your hand inexplicably back in the bowl.

   A few more bites and you'll tell yourself you should quit.  Then just one more bite sneaks its way into your mouth. So you move across the room thinking the distance will make you safe.

   But then you need your drink that just so happens to be sitting by the bowl... so you grab a sip and a quick bite.  And so it goes until you reach the bottom of the bowl.  With the last little crumb comes a simultaneous sense of sadness and relief.

    Don't say I didn't warn you!

Orange Creamsicle Sourdough Muffins

     I think I'm in a phase... I'm just not sure which phase I'm in.  Perhaps it's my orange creamsicle phase.  That's a perfectly good summer phase, right?  I mean creamy and citrusy and yummy seems like a pretty decent phase to be in.  But I am pretty sure I'm in a sourdough muffin phase too.  I mean I have my starter, Bertha, and she likes to be fed regularly.  She has to share the fridge with other food, so she is only allowed to get so big.  So she nicely helps make delicious pizza dough and plenty of yummy muffins to keep her size in check.  So what do you do when you are caught between to phases?  Let them collide and see what deliciousness results, of course!

Sunshine and Summertime Muffins (with summer squash, lemon and blueberries)

     My aunt, uncle and cousin recently moved back to town.  It has been a lot of fun having them around after they lived 3 hours away for so long.  They planted a really nice garden in their backyard with plenty of zucchini.  So, when the plants started going crazy they were doing what zucchini growers do at the peak of the season... calling in reinforcements to help eat the zucchini.  I was all to happy to help.  I love zucchini and though I tried to talk Matt into planting some again this year, he was resistant.  We had a major squash bug catastrophe a few years back and we were supposed to be paring down the garden this year.  So zucchini was out.  Thank goodness for family! ;-)

Deviled Egg Potato Salad

If you are like us and love potato salad with plenty of eggs in it or you want the taste of deviled eggs but not the pressure to peel them perfectly, this is for you! Perfect for picnics, BBQs or just because!

    I am definitely still in cookout mode.  It is so much fun to stare down a three day weekend and think about the possibilities.  One day really does make a ton of difference, doesn't it?  The extra day in the weekend and the fact that there is a holiday makes it seem like we really need to take advantage.  Of course summer holidays mean firing up the grill.  I asked Matt what he wanted to do this weekend and his answer was "grill something." Easy enough, I suppose.
