Di's Buttery Potato Rolls

These potato rolls come together surprisingly quickly. You can use leftover mashed potatoes, baked potatoes or just zap a couple. These soft rolls are perfect for sandwiches or with a schmear of butter.

     There is just something about the smell of fresh bread in the oven.  It is intoxicating to say the least!  Bread is one of the things my little guy really likes to help make.  He enjoys scooping the flour, dumping the flour, running the mixer.  I really love kneading.  There's something a little bit cathartic about it as long as you have the time to sit back and enjoy it.

Easy Family Meal Plan Week 4

      I am really excited to bring you this week's menu!  It is chalk full of all of the things my family loves to eat.  We are big pot pie fans.  We love pizza and a flavorful meatloaf! And as for fajitas and burrito bowls? We're all in!  Toss in a bright lemon cupcake and you have left us all smiling!   So, without further delay, may I present: Dinner!

Jess's Chicken Enchiladas

    These enchiladas are so good!  If you remember, my sister-in-law is an excellent baker.  She makes fun cakes and blogs about it at year of cake.  She makes more than great cakes though!  She also makes wonderful enchiladas.  Matt and I were amazed.  These smelled so good while they were cooking and they tasted even better.

Fresh Strawberries and (Sour) Cream Bundt Cake

When strawberry season rolls around, you have to make a cake. The sour cream makes for a deliciously moist bundt cake studded with yummy fresh strawberries.

     I have been wracking my brain trying to decide what to make for Valentine's Day this year.  I wanted something sweet and fun, but not too complicated.  I have a heart bundt pan, so it seemed like the perfect way to infuse a little love into the situation.  Of course a cake never hurt anything either.  I was really tempted to do something chocolaty and rich and luscious.  But we just did the Devil's Food Cake and I was feeling a little more in the mood for bright and fresh.

Blueberry Coffee Cake - A suggestion from one of you!

     Those of you who come around here regularly will probably recognize the origin of this recipe.  It is a fun variation on my great-great grandma's Dutch Apple Cake.  It is a very simple cake that comes together easily and is topped with fruit and struesel to make a delicious breakfast cake or an easy treat for tea time or dessert.  It is a family favorite that has been made by at least 6 generations now that my little guy helps so much in the kitchen.

Pig Skin Cheese Ball

This cheese ball is sure to score with your family and friends. Bacon, cheddar and ranch come together in this football shaped treat. Perfect for the big game or any get together!

     It's that fun time of year when we really get locked into football.  People who are just kind of fans are suddenly paying attention.  Even non-fans are wondering what they should eat during the big game.  The folks who are just there to watch the commercials need to eat too after all!  We start warming up for the big dance by making extra snacks during the playoffs.  We need to be good and ready, after all!

Devil's Food Cake

This cake is a real show stopper! Three layers of devil's food cake enveloped in the creamiest chocolate buttercream frosting. Perfect for birthday celebrations and special occasions!

      It's Cake Slice time again!!  You knew it was bound to happen, didn't you?  A big tall chocolaty layer cake wrapped in a creamy chocolate frosting was coming.  It was just a matter of time!  I almost talked myself out of it.  In fact, I did talk myself out of it at least two or three times.  Who needs a three layer devils food cake?  I mean it is a TON of butter, and it was just Christmas... We survived 12 days of cookies, but how far do we want to push it.  Maybe you should just make one of the smaller cakes.  Doesn't a lemon cake sound lovely?

Fall Harvest Maple Baked Oatmeal

Baked oatmeal is one of our favorite breakfast treats. Make a batch ahead for quick weekday breakfasts or serve it at your weekend brunch. It's delicious, hearty and easily customizable!

     It has been a little while since I shared a new baked oatmeal recipe.  But this is a great time of year to make a warm, hearty and healthy breakfast so it seemed time to make another batch.  Baked oatmeal is one of my favorite things to make with my little guy.  The measurements don't have to be super exact, the techniques are not difficult and it is something he can more or less do on his own with a little direction.

    I have had my mind set on making chicken glazed with my Peach Habanero Jelly for quite some time now.  I love the sweet heat combo that the jelly brings.  It is perfect spread over cream cheese and crackers.  In fact it is always one of my favorites!  But, I just knew there had to be other ways to use it!

      When I posted the recipe for Pulled Pork Enchilada Verde Soup I promised a super amazing dip recipe using some more leftover pulled pork.  I think this leftover pulled pork is quickly becoming one of my favorite things to have on hand.  I actually just bought a couple more pork butts because they were on sale so cheap at the store... now I just need to talk my dad or brother into smoking them for me!  If nothing else, I can always braise it I suppose!

Pulled Pork Enchilada Verde Soup

Turn your leftover pulled pork into something completely different! This soup has the flavor of enchiladas in a hearty and easy package.  Dinner is served and it's delicious!

       You all had to have known it was bound to happen, another leftover pulled pork recipe!  I hope you love them as much as I do.  My brother smoked 4 pork butts in the beginning of December.  He was doing some for my sister's wedding and figured while he was smoking some meat, he might as well really go for it!

     We were lucky enough to end up with a few quart sized bags of yummy, smoky, delicious pulled pork for the freezer.  One portion ended up becoming a deliciously smoky and out of this world addictive dip that I hope to share soon.  Another portion became soup for #soupweek!
