Easy Family Meal Plan Week 7

    I hope your forecast is as nice as ours has been.  We have been seeing sixties... in February!  That is nearly unheard of, especially for this many days!  Of course it does kind of make you wonder if it is really a good thing in the long run, especially since we have already seen mosquitoes (still in February?!) Hopefully it is just an anomaly and not a sign of greater changes. Either way, we have been getting out an enjoying it.  After all, it seems like there has to be another shoe that is going to fall and now we'll have a blizzard next week or something.  Let's all cross our fingers and toes and hope that doesn't happen.  Meanwhile I will be strapping on some tennis shoes and heading out to play with my little man.  Thank goodness we have the menu planned for the week and my shopping is done.  Now all I have to do is share the menu with you.  I hope you enjoy it!

It is hard to beat a really good grilled cheese.  This Grilled Cheese with Tomato and Pesto from Joyful Homemaking looks amazing and is the perfect quick dinner that will allow you to spend more time enjoying this weather.

I am also a HUGE nacho fan!  Throw it on some chips and melt some cheese over it and I am there!  I can't wait to try this 30 Minute Nacho Skillet from New South Charm.

In case your February is still feeling like February, it wouldn't hurt to plan on some soup.  This Cauliflower Soup from Recipe Treasures looks fantastic!

Next up I'm making you some Spinach and Feta Stuffed Chicken Breasts.   They are easier to make than you'd think.  They are fancy enough to make for company and easy enough to do on a weeknight!

I am always ready for some pasta, so this Lasagna Pasta from Jonesin' for Taste has my name written all over it.  Just look at that cheeeeeese!

By the end of the week, it is nice to have a simple, quick and delicious meal in your back pocket.  These Easy 10-minute Tuna Melts from Budget Girl are just the thing!

Of course we need a little treat along the way.  How about a Blackberry Lavender Bundt from A Day in Candiland? Not a bad way to round it all up!

    1. I love it too, but it does make me a bit nervous. My daffodils are poking through the ground now, so it will be a sad story if it freezes again. In the mean time we are soaking up every bit of sunshine and wondering how it is we are able to break a sweat wearing a t-shirt in February. (Chasing the little guy around the block is the answer, if you were wondering too!)

  3. I killed a mosquito today and think I was more shocked than him, lol. We're enjoying this weather but poor plants are all confused and I'm afraid the snow that's coming will do much harm. Your meal plan looks amazing, but I'm still dreaming about your pecan pie :)

    1. I know they've been buzzing around for two weeks! I would have thought we had a hard enough freeze in December and January to kill them off for a bit, but maybe it didn't last long enough? Thank you!

  4. It's crazy warm here too! I decided I need to call the vet and ask about Chance's medicines. We usually don't go all year round up here!

    More winners! When oh when was the last time i had a tuna melt? And that bundt cake! Hey, I bet that one got you, too, knowing you're a fan of the bundt!! :)

    1. I know, I can't wait for our blackberries to come in now. I don't think I've ever done a blackberry bundt before!!! So many fun things to try ;-) I didn't think about puppies... who would have thought we'd be worried about bugs in February?!
