This simple Italian inspired chicken soup comes cooks all day while you go about your busy life. Stir in some pasta about a half an hour before it’s time to eat, and dinner is ready!

This chicken soup will fill your family’s bellies and warm them right up. Nobody will have to know how easy it was to make, that can be our little secret!

As the weather cools down, soups become a welcome sight at the dinner table. Well, they do for me anyway.  

My husband doesn’t think soup qualifies as a meal. He needs at least a grilled cheese or something to go with it to make it count as a meal.

We like using a whole wheat rotini in this soup. It adds that little extra bit of fiber. 

You can use whatever pasta you like best. Just be sure to choose a size that fits well on your spoon so that it is easier to eat.

On a busy day when you want something flavorful, healthy, and easy, this fits the bill.  All it takes is a few minutes of chopping and prepping in the morning and then you leave it alone while you do whatever is on your calendar.  

Even better, chop and prep the night before.  Then all you have to do is wake up, dump everything in the slow cooker and go on about your day.

Easy Substitutions or Changes

You can easily add more vegetables to this soup if you would like. Chopped zucchini would be delicious, just add it at the same time as the chicken and peppers.

For a more pasta Faggioli feel, add a can of white beans to the mix. They would be a fabulous addition!

Spinach works well in soups like this as well. Just rough chop some spinach and add it at the same time as the pasta.

Of course you could also change up the spices if you would like. Instead of using basil and oregano, you could use some taco seasoning or chili powder to make it more of a Tex-Mex flare.

How do I store leftover soup?

Extra soup can be stored in the refrigerator for up to four days. For longer storage, you can freeze the soup. The texture of the pasta will change over time, but the soup should still taste great.

Ingredients
 

  • 2 teaspoons garlic powder
  • 2 green or red bell peppers diced
  • 14.5 oz can finely diced tomatoes
  • 15 oz can tomato sauce
  • pounds chicken breast cubed
  • 6 cups chicken broth
  • ¼ cup dry minced onions
  • 1 Tablespoon sweet basil
  • 1 Tablespoon oregano
  • pinch red pepper flakes
  • 8 oz dry whole wheat rotini pasta

Instructions
 

  • Put all ingredients except the pasta into your slow cooker. Cook on low for 7 hours or high for 4 hours.
    2 teaspoons garlic powder, 2 green or red bell peppers, 14.5 oz can finely diced tomatoes, 15 oz can tomato sauce, 1½ pounds chicken breast, 6 cups chicken broth, ¼ cup dry minced onions, 1 Tablespoon sweet basil, 1 Tablespoon oregano, pinch red pepper flakes
  • Turn slow cooker to high if it isn’t already, then add the pasta to the soup. Continue to cook on high for 30 minutes or until pasta is al dente.
    8 oz dry whole wheat rotini pasta
  • Serve garnished with Parmesan or mozzarella cheese.
