Pecan Pie Baked Oatmeal

Have the flavors of pecan pie in baked oatmeal form. This may taste like dessert, but it’s really a nutritious and hearty breakfast. Have it for Thanksgiving morning brunch or any day!

Pecan pie doesn’t have to be reserved for the dessert table. This yummy baked oatmeal recipe gives you those flavors in a yummy and healthier breakfast form. 

It is a perfect way to start your Thanksgiving, or any day for that matter.  Your taste buds will thank you!

By now you know how much we love oatmeal.  We love it in cookies, muffins, bread, cake and granola.

I have a whole board on Pinterest devoted to it and it even has it’s own category here on the blog.  But one of our absolute favorite ways to have it is as baked oatmeal.

It is amazing how many different ways there are to make it.  We’ve enjoyed baked oatmeal with all different kinds of fruit, pumpkin and even chocolate.

Mmmmm, chocolate oatmeal!  If you haven’t tried that one yet, you really should!  

But I thought it would be fun to come up with something a tiny bit different this time.  So, I present to you: Pecan Pie Baked Oatmeal.

Of course oatmeal is delicious a variety of ways.  We like eating it in a bowl with a spoon as well.

Take apple pie steel cut oatmeal as an example, or maple brown sugar steel cut oats in the instant pot.  But images of pecans and brown sugar were dancing in my head.       

While those would certainly be good in porridge as well, I wanted something more.  Something I could really sink my teeth (and my fork) in to!       

Besides I am constantly baffled by the number of you who say you’ve never tried baked oatmeal.  I am thinking of making it my personal mission to bring baked oatmeal to the masses!  Everyone should try it!

So to keep the good word spreading and to satisfy my need to bake more oatmeal, the beauty was born.  I don’t regret a single bite of it either! 

Usually I try to make my baked oatmeal recipes a little on the light and fluffy side, light and fluffy for baked oatmeal anyway.  The texture comes out a bit more like pudding, but is still sturdy enough to be cut into pieces.

But that texture doesn’t make you think of pecan pie at all. So, this baked oatmeal has a few more eggs and has a texture that is a bit more rich than most of the other recipes I have created.  

But with a healthy dose of oatmeal and a bit of yogurt tossed in, it won’t make you feel too guilty either.  Your nutritionist and your taste buds will praise you for a job well done!

I don’t know why I haven’t given this a try before.  If you think about it, the oatmeal goes perfectly with the sweet and nutty flavors of pecan pie.

So if you are looking for a breakfast that tastes like one of your favorite treats but you can feel good about eating, this is just the thing for you!

Pecan Pie Baked Oatmeal

Ingredients
 

  • 4 eggs
  • ¾ cup light brown sugar packed
  • 2 cups old fashioned oatmeal
  • ¾ cup milk
  • ½ cup plain yogurt
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • 1 cup pecans

Instructions
 

  • Preheat oven to 350°F and grease a deep dish pie pan or an square baking dish.
  • Beat eggs until uniform.
    4 eggs
  • Stir in remaining ingredients except for the pecans.
    ¾ cup light brown sugar, 2 cups old fashioned oatmeal, ¾ cup milk, ½ cup plain yogurt, 1 teaspoon vanilla extract, ½ teaspoon baking soda
  • Pour into prepared baking dish and arrange pecans on top.
    1 cup pecans
  • Bake for 35-40 minutes or until the center is set.
  • Allow to cool for a few minutes before serving.
  • Serve warm or at room temperature.

Just made this tonight and it’s delicious. The outside is chewy oatmeal and the center is like custard, with crispy pecans on top. Very good recipe! Thanks

I used half brown sugar and half maple syrup instead of the full brown sugar amount. Delicious!
