The Great Pie-Off

Our friends and family enjoy a good food competition.  This is the third in our "sanctioned" series to get your name on the winner's board. Whose pie would reign supreme?

Memorial Day Weekend seemed like the perfect time to host the third installment of our friends and family cook-off.  So we sent out the alert: a pie off and BBQ was coming!!  Everyone got out their rolling pins and their thinking caps and went to work.  Since my brother K.C. has won the title at both the Poultry Grill-off and the Chili Cook-off, he definitely had a target on his back.  Everyone was gunning for his pie.  Baking isn't really his calling, so he wasn't feeling all that confident going into it.  Even still, we all knew he was going to be stiff competition and we had better bring our A game if we were going to get somebody else's name on the board.

Laura's Creamy Chicken Taquitos

These taquitos were originally my cousin's recipe but we have adopted them as one of our own. We all love them! They are creamy, cheesy, full of flavor and easy to make!

Creamy inside and crunchy outside, these creamy chicken taquitos are so much fun to eat!

When I asked my family for some family favorite recipes, this is one of the recipes my aunt Marlene gave me.  She said she couldn't take credit for it though, it was really one Laura had started making but everyone loved them!  I was really excited to give them a try as Laura is quite the cook.  They were delicious and much easier to make than I had anticipated. They are so creamy cheesy and the flavor is great!

Easy Family Meal Plan Week 21

A week's worth of delicious recipes for family friendly dinners and a lemon bar reward for another great week!

Happy Memorial Day Weekend!  I know that is not a worldwide event, but it is never a bad time to stop and think about what others have sacrificed to give us what we have today.  A little refection and appreciation never hurt anyone.  So for those of you who have served, thank you.  For the families of those who have served, thank you too.  I know it is not easy to wait at home while somebody you love is far away.

Strawberries and Cream Skillet Roll

Your breakfast just got an upgrade. This giant sweet roll is stuffed with cream cheese, fresh strawberries and tons of flavor. It's so much fun to slice and serve!

One giant sweet roll stuffed with cream cheese and strawberries. It's like a giant strawberry cheesecake danish!

I have had this idea for a little while now, I was just waiting for the perfect opportunity to try it.  The three of us don't need to eat a sweet treat this size all by ourselves.  With a dozen people coming over, it seemed like a good time to make it a part of the menu.  Plus, I had plenty of other options if this didn't work.  Luckily it wasn't a problem.  It got rave reviews!

Pacific Pineapple Pulled Pork {Slow Cooker}

This pulled pork is a little bit teriyaki and a little bit char siu and all flavor! It is great on a sandwich and perfect over rice. Throw it in your slow cooker and dinner will be ready when you are!

I'm sure by now you know all about our love affair with pulled pork. It's just such an easy way to feed a crowd! Of course it doesn't hurt that my amateur pit master brother lives across the street and is usually happy to throw an extra pork butt on for us when he fires up the smoker.

Cheesy Potatoes {with bacon!!}

Loaded with cheese and bacon, these potatoes are going to disappear before you even know what happened! Great for BBQs, potlucks or family dinners!

We all love the traditional cheesy potato casserole.  It is so creamy and delicious, but sometimes it is nice to switch it up a bit.  These potatoes are just the thing!  MiMi first made these back in 2015.  It had been a little while so we had to have them again.  So when grilled pork chops made the family dinner menu, it was time to break these gems back out!

It's cake time everybody! For those of you who are new here, The Cake Slice bakers are a group who bake one of four choices from a designated cookbook on the twentieth of each month. This year we are baking out of the beautiful World Class Cakes by Roger Pizey.

Woot woot!  We made it to another meal plan!  You know what that means? It's time for the weekend!  I feel bad wishing the week away.  I mean it is 5/7 of the week and we only get so much time, but to be honest it's all about the weekend!  But we are going to have to eat again next week, so I thought I'd go ahead and share the menu with you now.  After all, tomorrow is the twentieth and we know what that means... cake!  So the menu is a day early so we can hurry up and put some veggies on the grocery list so we don't feel bad when we add all of the chocolate we'll need for tomorrow!

All Aboard! Little Dude Turns 4!

A fun train birthday party for my little engineer!

How is it even possible that my little dude turned 4? It doesn't seem quite right. The funny thing is how hard it seems to be hitting me. My own birthdays have never affected me that way. For instance turning 30 was like no big deal. I didn't really have any of those "this is the last time I'll be doing such and such in my twenties" feelings. But little dude turning 4? Bring on all of the feelings! I couldn't help but get a little sad about cuddling my three year old for the last time or kissing him goodnight for the last time before he was a big four year old. It was a good thing he was SO excited about his birthday and kept me giggling or I might have actually broke out in tears!

Chocolate Chip Cookie Dough Sheet Cake

This chocolate chip cookie Dough Sheet Cake takes the one of my favorite guilty pleasures and turns it into a Texas style sheet cake. You are going to love it!

A simple to make Texas style sheet cake that tastes like chocolate chip cookie dough. It's a dessert lover's dream come true! Get out your saucepan and whisk out, that's all it takes to make this delicious treat. It will be perfect for your parties, BBQs, potlucks and more!

Easy Family Meal Plan Week 19

It's time for another meal plan.  This week's menu has 6 great dinners and a sweet dessert!

Good morning and happy Mother's Day!  I am going to keep this short and sweet this week.  We have a lot of excitement going on at our house this weekend.  I am sure I will be sharing pictures later in the week.  But lets just say I've been elbow deep in cake batter and frosting these last couple of days.  So come back in a few days if you dare.  In the meantime, here's this week's menu!

Cheddar Croque Madame Waffles

This post is sponsored in conjunction with #BrunchWeek. I received product samples from sponsor companies to aid in the creation of the #Brunchweek recipes. All opinions are mine alone.

This is sure to become a brunch favorite. A ham and cheddar waffle is topped with creamy Dijon bechamel. More ham and cheese and a perfectly poached egg seal the deal for a fun brunch style twist on the classic French Sandwich.

I am a bit sad to have to tell you this is the final day of #BrunchWeek. I hope you have enjoyed it as much as I have.  My must make list is about a mile longer and I can't wait to try some of the fun recipes I've seen!

Rhubarb Crunch

This post is sponsored in conjunction with #BrunchWeek. I received product samples from sponsor companies to aid in the creation of the #Brunchweek recipes. All opinions are mine alone.

This is one of my husband's favorite desserts. A layer of rhubarb is covered in a sweet buttery crust for the perfect sweet tart treat.

My husband has been begging to plant some rhubarb at our house ever since we moved here.  Four and a half years later and we still don't have it!  It's not that I don't want it, it's just that we never think of it at the right time. I think he only wants it so he can have this Rhubarb Crunch on an annual basis anyway.  So when my parents moved to a place with rhubarb, we were in!

Pineapple Sweet Rolls

This post is sponsored in conjunction with #BrunchWeek. I received product samples from sponsor companies to aid in the creation of the #Brunchweek recipes. All opinions are mine alone.

These beauties are the perfect spring and summer treat. Bring the taste of the tropics to your breakfast or brunch table with a pineapple sweet roll!

I am so excited to be sharing these with you guys.  I have been dreaming of making some sort of pineapple sweet roll for months, but haven't had the time to get to it.  I really thought I was going to do it at Easter but gosh darn it if that calendar of mine doesn't always have a way of filling up faster than I think it should! So I knew I just had to do it for #BrunchWeek.

Chocolate Rose Truffles

This post is sponsored in conjunction with #BrunchWeek. I received product samples from sponsor companies to aid in the creation of the #Brunchweek recipes. All opinions are mine alone.

A bit of decadence and a lot of love rolled up in a perfect truffle package. Dark chocolate and rosewater pair perfectly together for a one of a kind treat.

I'll be honest with you, when I got a package from Nielsen-Massey with lemon extract, almond extract and rose water I immediately had a thousand ways to use the lemon and almond extract in mind.  I love Nielsen-Massey products and actual bought a whole quart of their vanilla bean paste because I loved it that much!  The rose water, on the other hand I wasn't quite sure what to do with.  That is, of course, the precise reason why I just knew I had to create something with that!

Apple Brunch Punch

This post is sponsored in conjunction with #BrunchWeek. I received product samples from sponsor companies to aid in the creation of the #Brunchweek recipes. All opinions are mine alone.

Move over mimosas, brunch has a new drink! Apples, bourbon and prosecco team up for a refreshing breakfasr drink.

How are you guys enjoying #BrunchWeek so far? I am loving it! My must make list is growing by the minute.  We are having breakfast for dinner every day for the foreseeable future and then for a few more weeks after that!  As a kid, brunch meant one thing; belgian waffles. Of course they had to have strawberries and whipped cream on them too! We used to go to a brunch buffet at the country club up the street some Sunday mornings and that was a must have on those days.  Of course I would certainly not snub my nose at waffles with strawberries and whipped cream now either.  In fact I would very happily accept.  But as these things go, my brunch expectations have changed slightly.

Parmesan Polenta Brunch Bowl with Asparagus and Sausage

This post is sponsored in conjunction with #BrunchWeek. I received product samples from sponsor companies to aid in the creation of the #Brunchweek recipes. All opinions are mine alone.

Perfect for breakfast, brunch or a fun dinner, these brunch bowls are full of flavor. The egg goes so well with the Parmesan polenta for a creamy and decadent brunch treat.
fork piercing runny yolk of poached egg on polenta with sausage, asparagus and grated Parmesan

An egg poached to perfect sitting on top of a bowl of creamy Parmesan polenta. It would be a treat on its own, but add some asparagus and sausage to take it to the next level. This is brunching at it's best!

Welcome to #BrunchWeek 2017 and an Awesome #Giveaway

Good morning everyone!  I usually find it a little hard to get started on Monday mornings.  After the weekend it is just hard to get it into gear and get everything done before we head off to work.  But this week I am up and at'em and raring to go! It't Brunch Week everyone!  I have been waiting for this all year and it is finally here.  So grab a mimosa and settle in, this is going to be good!

Welcome to the fifth annual #BrunchWeek hosted by Terri from Love and Confections and Christie from A Kitchen Hoor’s Adventures. We are so excited to have you join us this year as we celebrate Brunch and prepare for Mother's Day.

Peach Breakfast Cake, a New Take on an Old Favorite

Use fresh or frozen peaches to make all of tour breakfast dreams come true. This cake is perfect for tea time too. It's an old fashioned recipe that will quickly become a an all time favorite.

Slice of peach breakfast cake served with peach slices

I thought it would be fun to keep the peach recipes coming.  Peaches are one of my favorite summer fruits, even if they are a bit tricky.  In their own way they are a bit like avocados;  you wait and wait and wait for them to be at their peak and 10 minutes later they start to shrivel.

So I always try to buy them a half dozen or so at a time and just do it frequently throughout the season, that way there are always good peaches ready to go.  But still every once in a while, one sits just a bit too long.

They are still good, but you can just tell that when you bite into it you will have peach juice running down to your elbows.  It is delicious, but sticky!  So if I find a couple of peaches got to that point, it is time to fire up the oven.  You know, as if I need an excuse!

Easy Family Meal Plan Week 18

Hip hip hooray for the weekend!  This time of year is always jam packed with activities.  It has been for as long as I can remember.  As a kid it was sporting events, dance recitals, end of school activities, graduations and the like.  Now its parades, blog events and more (super fun) blog events and birthday parties to throw!  I am chasing my tail, but at least it is all for happy things.  But all this craziness means having our meals planned out in advance is that much more important.  Every little bit of organization helps when you don't know if you are coming or going.  So without further ado, I present this week's menu!

Fried Ice Cream Bars

All of the fried ice cream flavor without the mess and a great make ahead too! Perfect for Cinco de Mayo, potlucks and BBQs too!

I actually first posted this recipe a couple of years ago when the blog was in its infancy. I had maybe three readers at the time and they were probably all my mom, just in different devices!  So now that at least four or five of you are kind enough to stop by on a regular basis, I thought I should share it again so none of you miss out on the deliciousness!

Tequila Lime Grilled Chicken #MexicanRecipes

I hope you are enjoying #MexicanRecipes week as much as I am. I just love all of the inspiration! Since we started off the week with a side dish, I thought we better do a main dish as well.  Of course I love just about anything wrapped in a tortilla, but I figured with all of the carbs in the Mexican Street Corn Barley Salad I should probably take it easy on the entree. Besides, it's grilling season and we better take advantage while the getting is good!

Mexican Street Corn Barley Salad

It's Cinco de Mayo week everyone! Of course that calls for a fiesta and plenty of delicious food. So grab a margarita and get comfy because some of my blogger friends and I have been cooking up a storm in preparation for the fiesta!
