     Do you have big plans for the weekend?  Ours is going to be busy but fun! 12 Fun Ideas for the 4th of July

12 great ideas to celebrate the 4th of July.  We have everything from appetizers, main dishes, side dishes and plenty of red, white and blue desserts. We also have decor and more!


     How do you normally celebrate the 4th of July? We almost always cook out. Most of the time it's hamburgers, either Maw-Maw's hamburger surprises or American lava burger surprises.  Sometimes it's pork chops.  Either way there are plenty of traditional BBQ sides, baked beans, potato salad and more!

Baseball Baby Shower

A little rookie is coming soon, so it's time to celebrate! This baseball shower was a perfect way to celebrate my sister and my soon to be nephew!


       You may remember that I through my middle sister a bridal shower brunch last fall.  Well, guess what?!  I just had the chance to throw her a baby shower as well!   I think she liked the last shower so much that she couldn't wait to have an excuse for another one!  I kid, I kid.  But really, I am going to be an aunt in a couple of months, so we wanted to make sure that the baby has everything he needs.

      When planning my sister's baseball themed baby shower, we had all sorts of cute ideas.  Of course we had plenty of sweets in mind too.  But it seems like a shower needs a cake, am I right? So I knew I had to make her something fun.  She is a huge fan of things like dirt pudding, so much so that she had me make some in mason jars for her wedding dessert table! So I thought a cookies and cream cake would be perfect.

Linda's Baked Caramel Corn

     This recipe makes the perfect crunchy, buttery caramel corn.  It is perfect for a party and just like what you get at the baseball stadium.  The best part is you can make it ahead!


       When we decided to throw a baseball themed baby shower for my little sister, we knew we had to have all of the bases covered. (Ha! See what I did there?!) We needed peanuts, hot dogs and nachos.  We needed plenty of penants and of course we needed caramel corn.

      It's time for another weekly menu.  To tell you the truth, I feel like I just wrote the last weekly meal plan. How did a week pass already? No matter, it somehow has and it is time to get ready for the next one!  This week's menu has great variety and I can't wait to try it all!

Egyptian Feta Spread for #EatLikeAnEgyptian

A perfect mix of fresh herbs, lemon juice, feta, tomatoes and extra virgin olive oil spread over pita. This would make a perfect starter for your next meal!


     I love getting to explore the world in my kitchen. I may not have the time or money to get all of the places I'd like to visit in person, but trying another culture's food is a great way to get to know a little bit more about them.

Caramel Apple Empanadas {With Cajeta or Dulche de Leche} #DairyMonth

      Would you like to hear how these caramel apple empanadas came to be? I knew you would! Little dude and I were busy making homemade cajeta from Ol' McGrandpa's goat milk. We were supposed to be going to MiMi and Pops' that night for family dinner. So we called to say we'd bring cajeta and apple slices for dessert. I know, how virtuous of us to do fruit slices for dessert!  But in the background my littlest sister was requesting empanadas instead.

How to Make Homemade Cajeta #DairyMonth

This Cajeta is liquid gold. It is thick, sweet and caramely. It is great over ice cream, pound cake, as a dip for apples or on a spoon! It is made with goat's milk for the full flavor, but this recipe could be easily made with cow's milk as well!



      We are so lucky to have such great parents and even luckier that they are all relatively close to us. We are even luckier yet that a couple of them have homesteads that produce delicious food... and sometimes they share!

A Visit to Ol' McGrandpa's Farm

Checking out my father-in-law's homestead is always a treat. Getting a behind the scenes look at a small dairy goat operation is a perfect way to celebrate June being dairy month!



      I thought it would be fun to take a small break from recipes and celebrate dairy month in a different way for a day. My father-in-law and his wife have a small dairy farm. I would venture to guess that this farm is different than what you are picturing though.  Close your eyes and think dair farm.  What are you seeing?  If the only thing you can picture is a giant barn filled with black and white cows you may be in for a surprise when I tell you about their dairy operation!

    It's my little sister's baby shower day!  You may remember her bridal shower brunch last fall.  Well, guess what? She liked it so much she decided to give us a reason for another shower! So as you are reading this I am likely running around like a chicken with my head cut off.  I am probably circling, foofing, recircling and wondering where the heck I put my phone. The about an hour before the party I will wonder where the heck everyone is. Is that just me?! Really, I've been trying to slowly work towards being ready all week.  MiMi and I picked out a theme we though would be easy to execute.

Breakfast Pizza With a Hash Brown Crust

This breakfast pizza can be customized with all of your favorite toppings.  The hash brown crust is what will steal the show though! What a fun base for a breakfast pizza!


    Apparently June is when I make breakfast pizza.  I originally posted this in June of 2015 and here I am again revisiting it!  This pizza has been a favorite for a number of years now.  MiMi made a bunch of them for Cori's bridal shower.  They were a big hit with everyone.  You can adjust the toppings to whatever you like.  I had some leftover ham to use and our green onions are going strong in the herb garden... so that was the combination we went with!  It would be good with sausage, bacon, peppers or mushrooms.  Anything you like in your omelets would be a perfect addition!

All Natural Strawberry Rhubarb Sauce

This delicious sauce is so simple to make and so delicious! Strawberry, rhubarb and apples get sweetened with just a touch of honey for a great snack. It is perfect eaten alone or a fun dip for your animal crackers!


     My husband grew up eating rhubarb, at least on occasion.  We never really did.  In fact at our pie-off my little sister thought the rhubarb pie might be a celery pie.  She said she was glad when she tasted it that it wasn't! Ha! Can you imagine a celery pie? Maybe one of you has a good recipe?!

    I think I am still in a breakfast frame of mind after all of the fun brunch posts last month.  Did you find a new favorite?  I know we certainly did.  We will be making the Parmesan Polenta Brunch Bowls and Croque Madame Waffles for brinner plenty this year and I've already done another twist on the Pineapple Sweet Rolls that was delicious. So I hope you are ready for more breakfast items, because this week is full of them!  Of course we almost always eat our breakfast food for dinner, so don't feel like this has to be served in the morning.

Easy Family Meal Plan Week 23

    We made it through another week.  I don't know about where you are, but the temperatures are really starting to heat up here.  This week is forecast to be in the 90s (F) most of the week.  I have a lot going on at work this week and I need to get geared up for my sister's baby shower.  Then next week we are celebrating dairy month on the blog.  Some blog friends and I are going all out.  I have some fun things planned and I hope I can pull them off like I have envisioned them! So thank goodness for meal plans.  This menu is going to be yummy and at least we have that much planned!

Portillo's Inspired Chopped Salad for a Crowd

This chopped salad is perfect for a party! It is part pasta salad, part green salad and all yum! A simple dressing and all of your favorite ingredients will be great for dinner, a potluck or a BBQ!


   This salad is a little bit meaty of the leafy, cheesy, meaty salad we all love and a little bit pasta salad.  All of the flavors come together wonderfully and this salad is sized for a party.  Of course you can cut back and make it for a smaller group easily enough.  I have made it for a few big gatherings at our house.  I usually mix up the dressing the morning of the party.  I also get all of the chopping done a couple of hours in advance.  I leave the dressing off until right before it is time to serve.  Sometimes I'll even only dress half of the salad at a time just in case we don't need it all. Since the rest isn't dressed, it keeps longer and can be my lunches during the week!

Creamy Lemon Berry Pie

     I figure it is about time to tell you a little more about the pie I entered into our Great Pie-off.  As usual, I had the hardest time deciding what to make.  I spent a ton of time looking at recipes trying to get some inspiration.  In fact I had my mind made up a bunch of times.  Some sort of chocolate peanut butter pie sounded amazing.  In fact a couple of gems showed up in my Facebook feed that I would have happily made and eaten.

Maple Bacon Asparagus Salad

This simple salad showcases fresh spring asparagus with a simple dressing, some bacon and eggs. It is a great way to celebrate the simplicity of spring.

Fresh asparagus, crumbled bacon and hard boiled eggs in a simple maple dressing make a perfect spring salad!

    One thing I always look forward to as spring rolls around is fresh asparagus. It is so good and so much better when it is in season locally.  I love it roasted so much that I normally make more than my fair share of it that way.  Of course I grill a bunch or two and usually end up with some in a cheesy tart but a good ninety percent of the asparagus I buy ends up tossed in olive oil, dusted with salt and pepper and roasted.  This year I vowed to try a few new things and I am so happy I did.
