Cheesy Honey Chipotle Skillet Cornbread

A giant skillet of cornbread that balances just a touch of honey with the sweet heat of chipotle cheddar.  It would be great at your next BBQ or perfect alongside some chili!

       It seems like if you are going to celebrate dairy month you had better make a recipe that focuses on cheese. We are definitely a cheese eating family. It is always on the grocery list in one form or another.

      In fact, most of our favorite meals have it as a star ingredient. Little dude loves macaroni and cheese, pizza and cheese and crackers (preferably with homemade deer sausage.) I really don't think he'd mind only eating some variation of those three things all if the time!

      Actually I think my husband would be fine with that too, especially if he could throw in cheeseburgers. He loves grilling burgers but always has a tough time deciding what kind of cheese to put on top!

       So when Cabot sent a selection of cheese to help celebrate dairy month, I knew we'd have no problems using it up!  The only question was what recipe to share with you.

   I kicked around a bunch of ideas, but my thoughts kept going back to the chipotle cheddar. I thought that smoky spice of chipotle was begging to be played with.

     So I reached for one of my other obsessions, a trusty cast iron skillet, and went to work.  I toyed with the idea of working up a variation on my kickin' corn dip.

    I've had a hankering for that lately and the chipotle would add a delicious layer of flavor. But in the end I decided to do a ever so slightly sweet cornbread.

     Now don't let the name fool you, this isn't a sweet southern cornbread. There is just enough honey in there to balance the smoky spice and amplify the corn flavor. If you like a sweet cornbread you are going to want to go a little heavier on the honey.

       This cornbread also has plenty of butter and cream cheese in it to up our dairy intake and make a nice moist crumb. It has that perfect cornbread texture that just begs to be paired with a bowl of chili.

    Can you just imagine a hunk covered in honey chipotle butter alongside  baked beans at your next cookout? Or maybe cut a slice and quickly toast it in butter on a hot skillet and top it with a fried egg for breakfast. I am making myself hungry just imagining the possibilities!

Cheesy Honey Chipotle Skillet Cornbread

A giant skillet of cornbread that balances just a touch of honey with the sweet heat of chipotle cheddar. It would be great at your next BBQ or perfect alongside some chili!

  • 1/2 cup butter, softened
  • 4 oz cream cheese, softened
  • 2 cups flour
  • 2 cups cornmeal
  • 3 Tablespoons baking powder
  • 1 teaspoon salt
  • 2 cups milk
  • 3 eggs
  • 4 Tablespoon honey
  • 8 oz Cabot chipotle cheddar cheese, grated and divided


  1. Grease your pan, I prefer a 12" cast iron skillet but a metal 9x13" pan would work too. Place in oven and preheat pan and oven to 400 F.
  2. Stir together the butter and cream cheese until combined and mostly smooth.
  3. Add the cornmeal, baking powder and salt. Stir until well mixed. Add eggs, honey and milk and mix well.
  4. Stir in flour until just mixed, then fold in half of the cheese.
  5. Carefully remove hot pan from oven and spread batter in pan. This will help form a nice bottom crust.
  6. Bake for 20 minutes.
  7. Remove from oven and top with remaining cheese. Bake for another 5-10 minute or until baked through and cheese is melted.

    1. I make cornbread a lot more in the fall, but it really is nice with BBQ too. Plus I love keeping my cast iron in action!
