Fast and Easy Peanut Butter Yogurt Fruit Dip

      Are you a snacker?  We love snacks at our house, especially on the weekends. When it's nice out we tend to be outside most of the day. Whether we are working or playing, it is hard to stop for a meal. Plus our dinner time gets pushed back so we can utilize as much daylight as possible.

     Here I am with a pizza on #appleweek and it doesn't involve a sugar cookie crust or any brown sugar. You didn't expect that, did you? Me either! But here I am with a gooey, cheesy, melty, bacon topped pizza hoping you'll like it.

     Actually, I am sure you will! What's not to love? There's cheese! And apples! And BACON!

     Whew, please forgive me. All of this apple fun has gone to my head!

     This time of year is always interesting to plan dinners for. I have eaten my weight in fresh tomatoes from the garden and I am ready for something different. There is a nip in the evening air that makes you think fall, but it is still too warm to actually make casseroles and braises.

  Are you ready for some apples? I sure hope you are because we have a lot of good stuff coming your way.  I am a big fan of apples in all of their forms. My brother's trees were loaded this year so we have a freezer full of homemade applesauce and hand-pressed cider.  Both were a lot of work, but also kind of fun and the results were worth it.

Easy Family Meal Plan Week 37

     Eeeeek! Another weekend! As has been the plan for the last few weekends, the boys have working on the playset in the back yard.  The second floor is all decked and the monkey bars are up.  Hopefully tomorrow will bring railings on the second level and MiMi will be able to sleep better at night.  I am busy putting the finishing touches on #appleweek.  It is going to be fun and I can't wait for it to finally start tomorrow!

Simple Key Lime Roasted Shrimp

This roasted shrimp is kissed with the citrusy goodness of key lime juice. Dip them into lime butter for an extra special treat.  They are like taking a bite of Florida.



      After a few years of mild hurricane seasons  (I say typing a comfortable 12 hour drive from any hurricane zone,) this one came out of the gate with a vengeance. As my blogger friends and I were trying to figure out a way to show our support to those affected by Hurricane Harvey, the news of Irma started rolling in.

     While Irma may sound like a sweet old lady who might bake you cookies and pinch your cheeks, this storm seemed to have other things in mind. She was big. She was angry. She had her sights set on Florida.

     Did you know that Texas Sheet Cakes can come in other flavors than chocolate? It's true! I know that chocolate is the traditional version everyone knows and loves, but the possibilities don't have to end there.

      In fact there are a ton of flavors you could make.  Now I do have a variety of jelly roll sheet cakes on the blog. There's the Elvis version with banana, peanut butter and bacon. There's the banana with salted caramel cream cheese frosting and both of those are amazing. But MiMi says they are NOT Texas sheet cakes.

Grandma's Oatmeal Pie - Post by MiMi

Recipes from grandmas just have to be good! This is a great recipe for oatmeal pie from a friend's grandma. It is loaded with oatmeal and coconut, but even coconut haters love it! You have to try it!

This post was written by MiMi just a few months after the blog was started. I recently remade it and took a few snapshots to update the pictures. We'll see if you can spot the old ones I left!



    I got this recipe from my friend Lynn.  She has baked a couple for her family and posted a picture of them on Facebook.  I saw it and just had to get the recipe from her.  Her daughter-in-law verified that it's awesome.  She doesn't even like coconut either.

Brownie Baked Oatmeal

The taste of brownies is now an acceptable breakfast. It is really loaded with oatmeal and yogurt.  Go ahead and make some, I dare you!


     Sometimes in life you just need some chocolate? Am I right?  Of course I am! I'm always right, just ask my husband! 😉

     Sometimes that chocolate craving comes at breakfast time. Do you know what? You don't have to choose between suppressing the craving or feeling guilty for indulging it any more!

Easy Family Meal Plan Week 36

     Hoooooray for another weekend!  After spending 4 nights this week working on making homemade applesauce from my brother's trees, we switched gears to press some into cider.  As I am writing this we haven't done it yet, but chances are by the time you read it we will have.  I will try to put some pictures up on instagram so you can check it out if you are interested.  You would think after all of the #appleweek prep, I'd be sick of apples but it hasn't happened yet!

Pineapple Right Side Up Baked Oatmeal

Take a bite of the tropics with this fun breakfast! This baked oatmeal has a great creamy texture but is hearty enough to be cut into pieces. It is just sweet enough to taste like a treat but is a pretty healthy way to start the day!


       Have you ever had an idea in your head that just gets embedded and won't leave you alone? That was this baked oatmeal for me.  I thought of it months ago and even went so far as to buy the pineapple rings and cherries. Then life happened and I didn't get it made.

      Usually if something isn't made within the first week or so after I think of it, the ingredients end up being used for something else and I move on. Not with this oatmeal though. I just new I had to give it a try and see how it worked.

Avocado and Shrimp Bruschetta

Delicious shrimp, creamy avocado, lime, cilantro and a hint of chili powder piled atop some delicious garlic bread. It is a one of a kind bruschetta appetizer that reminds me of our trip to the Houston shore.



      What a crazy start to hurricane season!  A couple of weeks ago we watched in horror as hurricane Harvey hit the coast of Texas.  As if the damage from the winds wasn't enough, Harvey continued to dump rain on an already damaged city.

      Then it rained and rained and rained some more.  It was heartbreaking to turn on the news each night and the images were almost unbelievable. Foot after foot of rainwater forced people to climb onto their roofs to escape the water.  Good Samaritans were rescuing people in their fishing boats and the world watched amazed.

Easy Family Meal Plan Week 35

      Woohoo for another weekend!  We are on to phase two of operation playset build.  The first floor decks are going on.  It is really starting to come together.  I am interested to see what phase three brings.  I have been operating on the execution phase but have been leaving the planning to my husband.  He's loving every minute of it!  I think he is building the jungle gym of his childhood dreams.

     How was your long weekend? I hope you all had a blast. Ours was a good mix of productive and fun. We got married on Labor Day weekend 7 years ago, so we got to celebrate our anniversary. It's amazing how fast seven years can come and go. It's also amazing how it feels like it's been this way forever. A lot has changed in those seven years and we are grateful that almost all of it has been good.

Caramel Apple Sourdough Muffins

     I am really starting to get excited about fall baking. The days are still feeling like summer but there is definitely a hint of fall in the evening breeze. Plus our favorite local apple orchard is picking the early varieties of apples. Fresh cider is a little ways off still but they have the best cider slushies from last year's pressing and the frozen cider is perfect for the still warm days.

     Hooooooooray for long weekends!  Are you guys doing anything exciting over the Labor Day weekend?  We are hosting our annual shrimp boil.  Other than that my husband and Little Dude have big plans to get a play set built in the back yard.

   It will probably take the rest of the fall to get it done unless they shrink their plans a bit.  I came home from work and they were plotting it out on paper, tape measures in hand.  It should be interesting and I will try to share pictures and keep you updated!
