Garlic Soy Green Beans in the Instant Pot

These garlic soy green beans are easy, delicious and cook quickly with the help of a pressure cooker.

Have you ever found yourself in a side dish rut?  I know I have.  We tend to eat the same handful of vegetables over and over and I'm not always creative with how I fix them.

So when I saw fresh green beans on sale,  I was excited to get them.  We normally only have fresh beans during the summer and from our own garden. More so, I was determined to do something a little different.

Growing up we always had them with bacon, onion and new potatoes. They were always delicious alongside a steak and slices of fresh tomatoes still warm from the garden.

I still make them with bacon and onions more than any other way.  But I also love them simply flavored with soy sauce and garlic.

Other than prepping the green beans, this is practically a hands off recipe. And snapping the green beans is worth the payoff!

If you don't have fresh green beans lying around but you still want to freshen up your veggie routine, I have a few other ideas for you.  My slow cooker creamy corn is always a hit.  As we head into spring a creamy pea salad is always welcome and my version is lightened up a bit.  Or if you haven't tried asparagus in a salad (with bacon!) you'll have to give that a try as well!

What are your favorite vegetable side dishes?

    1. So far my favorite use for it is cooking chicken from frozen. I can come home, throw frozen chicken breasts in the instant pot and take a shower. By the time I come out they are ready to be shredded and made into whatever I have in mind. These worked out nicely and I made some spanish rice the other day as well. I haven't had it long, but I can see why people have been fawning over them.

    1. I love how the soy sauce gives that little deeper savory flavor to the garlic and beans. I could eat these weekly and be happy (especially if somebody else was snapping the ends off the green beans!
