Peanut Butter Sheet Cake

This easy and peanut buttery cake is perfect for feeding a crowd.  It is made much like a Texas sheet cake and would be good with that chocolate icing, but we love it with white chocolate buttercream for an extra special treat!


     This fun sheet cake is full of peanut butter flavor.  It is made in the Texas sheet cake style where you boil the butter and water on the stove, so there is no need for creaming or fussing to get it together.  Plus it is a great size for sharing, but don't worry, it will disappear quickly.  I made it as one of the treats at Little Dude's second birthday and thought it was time to remake the recipe, shoot some quick pictures and update the post a bit.

One Pan BBQ Pulled Pork and Rice Skillet Supper

One pan BBQ pulled pork and rice skillet dinner is full of flavor and texture.  It will have everyone coming back for a little more and leave you with very few dishes too! 



     Have you figured out by now we are pork people?  I know I have gone over my love of pulled pork many times.  I love how easy and versatile it is.  What I love even more is playing with the leftovers.  I have turned them in enchiladas, Brunswick stew, even baked chimichangas.  All of which are delicious.  But sometimes you just don't want the hassle of a bunch of dishes, yet you are just not in the mood for another pulled pork sandwich.  What's a person to do?

Brown Sugar Peach Cobbler

The warmth of brown sugar married with the goodness of peach cobbler.  The brown sugar peach cobbler has a hint of cinnamon and makes the perfect landing pad for a scoop of ice cream!



       Sometimes you just need a little peach cobbler. A la mode, of course! There is just something comforting and delicious about the warm fruit and simple topping with a bit of melted vanilla ice cream seeping into it!

Deviled Egg Dip

Whether you are just a fan of the flavor of deviled eggs but don't like the work of making them or you have extra hard boiled eggs you need used up, this dip is the perfect answer! It is easy and tasty!



   It is hard boiled egg season.  If your family is anything like mine, there will be plenty.  Little Dude loves to dye them, but to be honest he's not the only one.  I love it too and even though they might not admit it I even have a few brothers who still like to dye the eggs too.

     It's one of life's greatest conundrums, what do you do when you are craving turkey tamale pie but you don't have all of the ingredients in the house?  Compound that with the fact that you are wearing clothes that you wouldn't be caught dead in at the store, but they are soooooooooo comfy and you just can't imagine changing. And getting in the car. And going to the store. And getting all the ingredients. And coming home. Ugh! It's all too much.

    My coworker Diane and I hardly ever get to see each other.  But we talk a lot.  We both spend a lot of time on the road and like to bounce ideas off of each other as we go.  She is a wealth of information, so she is my first call when I come across something I am unsure of.  We go over how our days have been going, what strange things have popped up and then the most important part... food!

Saffron Shrimp and Pea Risotto

Dinner is served and it is delicious.  This saffron, shrimp and pea risotto is a fresh and delicious dinner. It takes a little time, but it is totally worth it!


      Sometimes you just have to do a little something nice for yourself. So you cook up some delicious saffron shrimp and pea risotto and if your family is really lucky, you share.  My family is lucky and they had better count their blessings!

Shortcut Chicken Stew

This chicken stew is made quickly with rotisserie or leftover chicken, but that does not make it short on flavor. This shortcut chicken stew is hearty, flavorful and oh so good!


      In our neck of the woods the weather this time of year can give you whiplash. One day it's sunny and springy, the next day you're layered up and trying to prevent frostbite.  We went on a nice long walk on Sunday only to not be able to feel our fingers on Monday.

     So we still are searching for warm and comforting meals.  When winter starts it's fun to break out old favorites like baked ziti, grandma's chicken broccoli casserole and cheese soup.  Then it's time to try new things. As winter drags on, we like to get creative with meals like buffalo chicken lasagna and brown sugar Dijon pork.

    When the warmer days start getting sprinkled in, it's nice to lighten things up a bit. But we don't want to give up on that warm comforting feeling when those cold days smack us in the face.  So we need something in between.
