Chicken Parmesan and Pasta Bake

A hearty casserole stuffed with all of the good stuff, this chicken Parmesan and pasta bake is a  perfectly easy fill'em up dinner!

      A filling dinner that's quick and easy is a must at our house. We tend to come home HUNGRY at the end of the day and usually tired too. So a pile of pasta with chicken and plenty of cheese like this comforting baked chicken Parmesan pasta meal is a welcome sight for famished eyes!


      I like to cook a ton of chicken breasts at once. While I'm doing it, I might as well go for the gusto, right?

    I think so! Sometimes I do it in the slow cooker, other times I cook a ton of chicken pressure cooker. I just add a bit of water and a little chicken base and let them do their thing.

     After the chicken is cooked to tender perfection, it can be chopped or shredded and added to any number of things. Add lime and Mexican seasonings and you have the perfect filling for enchiladas or tacos.  Throw it in some soup, stew, egg noodles or white chicken chili!

     You can always freeze some to have ready when you need it too. I happened to have a few cups of shredded chicken and a hankering for chicken parm.

    I could have easily adapted the recipe for chicken parm sandwiches, but I didn't have any buns or rolls and serving it on bread just didn't seem the same.  Sometimes a hearty roll is all that will do.

     I always have plenty of pasta though, so I knew something could be done. Taking a nod from MiMi's baked ziti, I stirred in a bit of sour cream to make it a bit creamier.

   Then I added some buttery cracker crumbs as a nod to the crunchy coating on most restaurant parm. Of course a healthy dose of cheese was needed too!

      The resulting casserole was a hit.  There was plenty for everyone to eat their fill plus leftovers that made perfect take to work lunches as well. Now that is what I call a win-win!

Tips and tricks:



If you don't have any chicken breasts on hand, use browned ground beef or Italian sausage instead. You could even leave out the meat if you'd like and still have a hearty meal.


If you know your evening is going to be busy, assemble the casserole ahead of time and tuck it in the refrigerator. At dinner time, take the casserole out of the fridge while you preheat the oven. It should only take a few extra minutes to heat it through.

Whip up a quick salad or roast some broccoli while this bakes and dinner is done!

Chicken Parmesan and Pasta Bake

Prep time: 15 MCook time: 45 MTotal time: 60 M

Ingredients:

  • 1 pound pasta
  • 1 24 ounce jar pasta sauce
  • 1/2 cup sour cream
  • 1/2 teaspoon oregano
  • 1/2 teaspoon garlic powder
  • 1/2 cup Parmesan cheese
  • 3-4 cups shredded chicken
  • 2 cups mozzarella cheese
  • 1/2 cup buttery cracker crumbs
  • 1 teaspoon garlic salt

Instructions:

  1. Preheat oven to 350 F and grease a 9x13" pan.
  2. Cook pasta to al dente according to the package directions and drain.
  3. Stir together pasta sauce, garlic, oregano, sour cream and Parmesan cheese. Mix with pasta and spread in prepared pan.
  4. Top with shredded chicken, then cheese.
  5. Mix together cracker crumbs and garlic salt and sprinkle over the top of the casserole.
  6. Bake covered for about 30 minutes and then uncovered for about 15 minutes or until cheese is golden.

  9. I like your idea of precooking the breasts in the slow cooker. My days are to long anymore for chicken to survive in the slow cooker, but precooking it on the weekends would be a huge help!
