This crustless dragonfruit pie is impossibly easy to make. You can do it all right in a blender or food processor. It’s a simple dessert that is so fun to make.

When you find yourself with three beautiful dragonfruit, you should consider yourself quite lucky. The problem is deciding what to do.

The first dragonfruit from my box of delicious fruit from Melissa’s Produce quickly became dragonfruit buttercream. The second was enjoyed plain as part of our freaky fruit tasting.

I wanted to do something fun and different with the third. There were some great recipes for ice cream and smoothies etc. On Pinterest but I wanted to do something a bit off the beaten path.

How about dragon fruit pie? Why not! It was tempting to do something along the lines of my cream cheese and kiwi pie because the texture of dragonfruit reminded me so much of kiwi.

My husband loves that kiwi pie, but basing the new recipe on one I’ve already done isn’t exactly groundbreaking.

Maybe making it into an impossible pie isn’t either, but I’ve never seen it done before. (If there is a cult following that already exists for impossible dragonfruit pie, I’d like to join the masses. I didn’t search too hard because I wanted to do it my way!)

Impossible pies are so easy to make. You just load the ingredients into a blender or food processor, give them a whir and bake what you get.

There’s no pie crust pastry to get right, no embellishments to worry about either. It’s just simple, straightforward and good.

I put my attempt at a dragonfruit pie into the oven and hoped for the best. We were very happy with the results!

It held together well to be served in slices but was still soft and supple. We enjoyed ours with blackberry sauce but it would have also been lovely with blood orange curd.

Unfortunately our batch of blood orange curd was long gone already. After filling a cake and swirling it in plenty of yogurt, it didn’t stay around long!

Impossible Dragonfruit Pie

Ingredients
 

  • 1 dragonfruit skin removed
  • ¾ cup all purpose flour
  • ¼ teaspoon salt
  • ¾ teaspoon baking powder
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup granulated sugar
  • 3 Tablespoons melted butter
  • ¾ cup milk

Instructions
 

  • Put all ingredients in a mixer or food processor. (Or do what I did and make it in a mixing bowl with a stick blender)
    1 dragonfruit, ¾ cup all purpose flour, ¼ teaspoon salt, ¾ teaspoon baking powder, 2 large eggs, 1 teaspoon vanilla extract, ½ cup granulated sugar, 3 Tablespoons melted butter, ¾ cup milk
  • Blend or process until smooth.
  • Pour into a greased 9-inch pie plate and baked in a 350°F oven for 55-60 minutes. The center should be almost set, it should just have a slight wiggle when shook.
  • Cool completely and then refrigerate until ready to serve.

no worries! ps i made two of the dragonfruit impossible pie this past weekend. they were a big hit, wish I could upload a photo! Somehow I was out of vanilla so substituted 1/2 tsp coconut extract. I also added half a banana to the second one to give it a little more filling since these come out a bit shallow-looking in the pie plate. it's definitely a recipe I'll make again!

I don't know of any, sorry! Though it does seem doable. I do have a kiwi and cream pie that could easily be made with dragonfruit.

I actually remember these impossible pies. My mother used to make them. She loved making pies when it didn't involve using a crust. This looks wonderful
