It is requested often at Mimi’s house and she’s always happy to oblige. It is a favorite during football season and any time the weather is cold.
The best part is, it is simple to make. I love it when delicious and easy intersect like this.


I asked MiMi for the recipe so I could share it with you. Though, of course I also wanted it for myself!
I like the flavor of mild green chilies in this recipe. It keeps it interesting, but still cozy.
For more spice, feel free to use hot green chilies or even diced jalapenos.
This recipe is quick enough to make on a busy weeknight. We also love making it on Sundays during football season, it’s great to keep warm on the stove to enjoy throughout the day.


You can even make white chicken chili in a crockpot as well. (Or try crockpot buffalo chicken chili!) Both versions are super tasty.

What to Serve With Creamy Chicken Chili
You can definitely enjoy it just as it is. You can also dress it up with your favorite toppings.
We love it with a dollop of sour cream and some pickled jalapenos or green onions. Some fresh cilantro or avocado would be yummy too.

It’s also great with shredded cheese, corn chips or cornbread. You could also make loaded jalapeno cornbread if you want to kick it up a notch, or some homemade corn muffins.
Storage
Chicken chili can be kept in an airtight container in the refrigerator for 4-5 days. It reheats well.
You can technically freeze it as well, though the dairy may split a bit when it is defrosted. If you plan to make some ahead of time as a freezer meal, wait to add the sour cream and half and half until it is reheated.

Creamy White Chicken Chili
Ingredients
- 1 pound chicken breast
- 1 onion
- 1½ teaspoons garlic powder
- 1 Tablespoon oil
- ½ teaspoon ground black pepper
- 1 teaspoon salt
- 8 ounces chopped green chiles (2 cans)
- 2 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon dried oregano
- 2 15 ounce cans great northern beans (or your favorite white bean)
- ¼ teaspoon cayenne pepper
- 8 ounces sour cream
- ½ cup half and half
Instructions
- Cut chicken breast into small cubes. Peel and dice onion.1 pound chicken breast, 1 onion
- In a soup pot, heat oil over medium heat. Add chicken, onion, garlic powder, salt and pepper. Saute until chicken is cooked through and onions are translucent.1½ teaspoons garlic powder, 1 Tablespoon oil, 1 teaspoon salt, ½ teaspoon ground black pepper
- Add beans, chicken broth, chilies, cumin, oregano and cayenne to pot. Bring to a boil and then drop to heat to low and simmer for 30 minutes.8 ounces chopped green chiles, 2 cups chicken broth, 1 teaspoon cumin, 1 teaspoon dried oregano, 2 15 ounce cans great northern beans (or your favorite white bean), ¼ teaspoon cayenne pepper
- Remove from heat and stir in sour cream and half and half.8 ounces sour cream, ½ cup half and half
- Serve with desired toppings.

I like this so much I made it for dinner on my birthday. It doesn’t disappoint. I love all of the soups for lunch and dinner!! I find if you make cornbread or a homemade French bread the hearty eaters like it better.

Hi Carlee, I hold my hands up, I've never tried white chilli. I 've always thought of chilli as red. I just don't understand people who don't 'do' soup. It's what winters were created for (isn't it?). This could be the year I try my first white chilli!
