Super simple to make gooey butter cookies dotted with the goodness of chocolate sandwich cookies. These cookies and cream gems are fabulously soft and delicious.

If you are looking for super soft cookies that are easy to make and just a bit different, I don’t blame you one bit. (And you’ve totally come to the right place!) These cookies and cream cookies are loaded with cream cheese for that perfect chewy bite and they start with a cake mix so there’s basically no measuring involved!

Cookies and cream desserts have always been up there on my list of favorites.  It’s hard to go wrong when those yummy little sandwich cookies are involved.

Of course the ice cream (and ice cream cake!) is delicious, but I live trying cookies and cream in a variety of unexpected treats as well. There’s cookies and cream popcorn which is a fun snack for parties and game day.

I have also baked Oreos into a cake. The layers of creamy white cookies and cream cake were a hit at my sister’s baby shower. I wrapped it in white chocolate buttercream for a showstopper of a cake!

As I was chopping the cookies for the popcorn, an idea struck. Wouldn’t it be fun to fold some of those cookie bits into cookie dough?

Spoiler alert: it is totally fun!

Rather than start from scratch, I grabbed a cake mix and my trusty gooey butter cookie recipe.

You don’t even need a measuring cup to make the dough.  Just add the cake mix, a softened brick of cream cheese, some softened butter and you are basically in business!

The dough can be chilling in the fridge in no time.  I like to use my small cookie scoop to portion out the dough.

It can be a bit sticky, even after a good chill. So I drop it right into the bowl of powdered sugar and let the sugar help me roll it into a ball.

That way I end up with less cookie dough stuck to my hands and more in the oven. Though having an excuse to taste a little dough isn’t completely frowned upon in my kitchen!

I  brought most of these to work and set them on our snack table. A couple of people chased me down to tell me how good they were, so I’d say that’s a pretty good sign!

I have tried a few gooey butter cookie variations now, but I think these and the lemon gooey butter cookies are the crowd favorites. What are your favorite cookie flavors or stir-ins?
