If breakfast is the most important meal of the day, you might as well make yourself something nutritious and delicious.  Steel cut oatmeal sweetened with maple syrup and a hint of cinnamon is a great start.

Add your favorite fruits or nuts if you’d like to take it to the next level.

Oatmeal is a great way to start your day off on the right foot. It is so versatile and filling.

The fiber will help keep you feeling full until lunch and the complex carbs will give you the energy you need to get there. I personally love the texture of steel cut oatmeal.

There is a slight chew and it feels like there is more to it than traditional rolled oats. The trade off for the texture is a longer cook time.

So until recently I didn’t make steel cut oats during the week. If I wanted some, I’d make a batch on the weekend and reheat the leftovers throughout the week.

With back to school time upon us, I’m on the lookout for healthy but quick breakfast options that we’ll all like. I don’t want a hungry belly keeping Little Dude from doing his best.

Luckily with the help of an instant pot, making steel cut oats during the week is within reach. It’s as easy as tossing everything in and setting the timer.

Breakfast can cook while you get everyone ready. That is like a little extra piece of mind on a busy morning.

Easy Variations on Maple Cinnamon Steel Cut Oatmeal

Stir in your favorite fruit. We used fresh peaches, but bananas, apples or berries would all be delicious too.

Add nuts for more crunch and flavor. Pecans are my favorite, but walnuts or slivered almonds would be great too.

Prefer honey? Use that in place of the maple syrup.

Storing and Using Leftovers

I love making a big batch of oatmeal and reheating it throughout the week. Just put the leftovers in a covered container and refrigerate for up to a week.

For even easier grab and go breakfasts,  put the leftovers in small jars or covered bowls. Then your family can grab one when they meed it.

I like to add a little extra liquid when I reheat oatmeal. A splash of water or milk will help it reheat without getting too clumpy.

Ingredients
 

  • cups steel cut oatmeal
  • 4 cups water
  • 2 cups milk
  • cup maple syrup
  • 2 teaspoons ground cinnamon
  • pinch salt
  • Optional stir-in and toppings: fresh fruit nuts, additional maple syrup, dried cranberries etc.

Instructions
 

  • Spray the inside of your pressure cooker pot with cooking spray. Add all ingredients.
    1¾ cups steel cut oatmeal, 4 cups water, 2 cups milk, ⅓ cup maple syrup, 2 teaspoons ground cinnamon, pinch salt
  • Cook on high pressure for 10 minutes, then quick release the steam. *
  • Stir well and add any toppings desired.
  • Store leftovers in the refrigerator and reheat as needed.

Notes

*I like to place a damp rag over the pressure release valve when venting starchy liquids to prevent messy splatters.

steel cut oats are so easy to make in the instant pot, you don't have to worry about them boiling over. I love the maple and cinnamon addition
