Cinnamon rolls are the darling of special morning breakfasts, but there are a couple of things that can make them even more fun.  1. Make it a super giant cake sized roll with layer after layer of goodness. 2. Add fun flavors like orange and cardamom!

With the secret shortcut of using Rhodes frozen bread dough you can have this fun breakfast treat on the table with very little effort. It’s a great way to celebrate the first day of school or enjoy a leisurely weekend brunch.

It is hard to believe it, but it is back to school time.  In fact, Little Dude starts first grade this week!

Is somebody cutting onions? I swear I’m not crying!

Really, he is ready and we are excited to see how much he learns and grows this year. Kindergarten amazed us with learning to read and write. This year should be even better!

Anyway, we have been celebrating the end of summer, trying to pack in as much fun as we can. But now it’s time to focus on the school year.

So this week, my blogger friends and I will be sharing great back to school recipes. We’ll have easy breakfasts, lunch box ideas, fun snacks and quick and easy dinners.

There are also prizes you can win from our great sponsors, like Hamilton Beach who sent me the pretty hand mixer above. But first lets take a closer look at this roll.

Making a giant orange cardamom roll

Defrost a loaf of frozen bread dough. This can be done in an hour or two on the counter or overnight in the refrigerator.

Once the dough is defrosted, but still cold roll it out into a big rectangle.

Be sure to either lightly flour or grease your rolling surface and rolling pin to keep it from sticking.

Beat together some butter, orange juice concentrate (the kind in the can in the freezer section at the store) and some cardamom.

Spread the filling over the bread dough and cut the dough into strips.

Loosely wrap the strips around each other in a greased 8″ cake pan. Cover and let rise.

Bake until golden and delicious. Then drizzle with a glaze made from more orange juice concentrate and powdered sugar.

Cut yourself an extra big slice and enjoy!

Easy variations on the orange cardamom roll

If you don’t have cardamom, feel free to use cinnamon instead.

If you would rather have individual orange cardamom rolls, roll the dough up lengthwise instead of cutting it into strips. Cut it into 9 cinnamon rolls. Place them in a greased 8″ square casserole dish and follow the remaining instructions.

You could make something similar with any fruit juice concentrate. I think we’re going to try apple next!

Ingredients

Orange Cardamom Roll

  • 1 loaf frozen bread dough
  • ½ cup butter softened
  • 3 Tablespoons orange juice concentrate
  • 2 Tablespoons granulated sugar
  • 1 teaspoon cardamom or cinnamon

Orange Glaze

  • 2 Tablespoons orange juice concentrate
  • ½ cup powdered sugar

Instructions

  • Defrost bread dough.  When dough is soft but still cold, roll it out on a greased or floured surface until you have a large rectangle.  About 10×15 would be great, but it does not need to be exact at all.
    1 loaf frozen bread dough
  • Beat together the butter, orange juice, sugar and cardamom. Spread over dough rectangle.  Cut dough into strips about 1 – 1 1/2 inches thick. Begin to wrap them around each other, placing them in a greased 8″ cake pan as you go.  You want it to be loose, but touching.  It should form a giant cinnamon roll or rose shape.
½ cup butter, 3 Tablespoons orange juice concentrate, 2 Tablespoons granulated sugar, 1 teaspoon cardamom
  • Cover with plastic wrap and allow to rise until about doubled in size, roughly an hour.
  • Remove the plastic wrap and bake in a 350°F oven for 25-30 minutes or until golden brown.
  • Mix together the orange juice and powdered sugar for the glaze and drizzle over warm roll.
2 Tablespoons orange juice concentrate, ½ cup powdered sugar
  • Slice and serve.

I like doing to freeze cookie dough in individual scoops so a could pull a couple out and bake them right before the students came home. Our home smelled so welcoming and a cookie and glass of milk is always a treat.
