Cozy Apple Cupcakes with Easy Salted Caramel Cream Cheese Frosting

      These delicious cupcakes are layer upon layer of fall goodness. The cupcakes are steaped with hot apple cider tea bags loaded with apple, cinnamon and cloves. The apple flavor is enhanced with a bit of green apple syrup. Then they are topped with a fabulous caramel cream cheese frosting that can hold its shape for piping. It is the perfect autumnal treat.


     I hope your sweet tooth is prepared for this week. Usually I try to work some savory recipes into appleweek, but this year it just didn't work out that way.

     So after the out of this world good caramel apple popcorn balls yesterday, we are keeping the caramel and apple vibes today. This time it's in the form of fun cupcakes and of course my darling frosting.

      When the tin of Republic of Tea hot apple cider tea bags showed up my mind instantly flashed back to the sweet tea cupcakes I made this summer.  I just knew these bags filled with apple, cinnamon and cloves would make for a great subtle flavor profile to some cupcakes.

      Too accentuate the apple flavor, I used some of Torani's Puremade green apple syrup. There are no artificial flavors, colors or preservatives in the puremade line, so they are a great way to add flavor to baked goods, frosting and drinks.

   The cupcakes came together super easily and resulted in soft and subtly apple spiced goodness. Because the flavors are steeped in they don't punch you in the face.

     However, if you like more spice with your apple spice, feel free to stir in a half teaspoon of cinnamon and a pinch each of nutmeg and cloves. Either way the cupcakes are sure to be scrumptious.

      Of course we need a fabulous frosting for our cupcakes. So I whipped up some caramel cream cheese frosting.

     I used two of my recent favorite frosting recipes and created a hybrid for these beauties.  It is part decorator's cream cheese frosting and part easy caramel buttercream

    Those two parts come together to make a super tasty whole. It is so easy to make and you get a little tang from the cream cheese mixed with the sweet warmth of the caramel.

     The flavor blends so well with the apple cupcakes. It would also be fabulous on pumpkin cupcakes, banana cupcakes, chocolate cupcakes and more!

     To complete the look I added a homemade oven baked apple chip to each cupcake. It made them extra festive and gives a preview of the flavors you are about to enjoy.

ingredients:

Cozy Apple Cupcakes
  • 2/3 cup milk
  • 5 hot apple cider tea bags
  • 1 3/4 cups flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup sour cream
  • 1 Tablespoon green apple syrup
  • 1/2 cup vegetable oil
  • 3/4 cup sugar
  • 2 eggs
Salted Caramel Cream Cheese Frosting
  • 1/2 cup butter, softened
  • 4 ounces cream cheese
  • 3/4 teaspoons salt
  • 4 cups powdered sugar
  • 1/3 cup thick caramel sauce

How to cook Cozy Apple Cupcakes with Easy Salted Caramel Cream Cheese Frosting

Cupcakes
  1. Warm milk to a simmer, remove from heat and add tea bags. Allow to steep for 15-20 minutes.
  2. Preheat oven to 350 and place 12 cupcake liners in a cupcake pan.
  3. Remove tea bags from warm milk. Stir together milk, sour cream and green apple syrup.
  4. In a separate bowl, whisk together flour, baking soda, baking powder and salt until lump free.
  5. In a large mixing bowl, beat together the eggs, sugar and oil until thick and pale yellow.
  6. Stir in half of the flour mixture, then the milk mixture. Stir in the rest of the dry ingredients until just mixed.
  7. Scoop into cupcake papers and bake for 15-18 minutes.
  8. Cool in cupcake tin for about 10 minutes, then remove to a wire rack and cool completely before frosting.
Caramel Cream Cheese Frosting
  1. In mixer bowl, beat together cream cheese and butter until it is creamy and smooth.
  2. Add salt, powdered sugar and caramel sauce and mix on low until most of the powdered sugar is mixed in. Then beat on high for at least 2 minutes.
  3. Adjust the consistency with a little milk or powdered sugar as needed to get it to the texture you like.
  4. Use immediately or store in an airtight container in the refrigerator.  To use chilled frosting, allow it to come to room temperature and then beat for a minute or two and then use.

  10. Apple cupcakes sound delicious. I actually don't think that I have made apple cupcakes before. I usually stick with the muffins. I also have never made salted caramel anything, and of course this frosting sounds amazing. I think that I am going to have to try some salted caramel.
