Enjoy a taste of the season without worrying about leftovers. This fun cake comes together in a matter of minutes and is designed to serve one person.  It has the perfect balance of white chocolate and peppermint and will satisfy your sweet tooth at a moment’s notice.

Have you ever tried a mug cake? I’ve always been tempted.

Growing up in a large family taught me how to cook in big quantities. It’s a habit I’ve had a hard time breaking.

However the idea of whipping up your own little personal cake in just a couple of minutes certainly has its appeal. It is such a great way to treat yourself without a ton of effort (or leftovers!)

So when a copy of Easy Cake Cookbook showed up at my door, I was excited to see there was a selection of mug cakes to choose from. Of course all of the cakes had my attention, I love a good cake!

The whole book is devoted to easy to make cakes. There are bundts, coffee cakes, snack cakes and a collection of mug and ramekin cakes.

Each one sounded more tempting than the next. They are all one or two bowl recipes that don’t entail anything too fiddly or complicated.

I already have Miranda’s Easy Homemade Cookie Cookbook and have had great luck with those recipes.  So I knew these cakes would all be yummy too.

I have my eye on a couple of the Bundt cakes, but those will have to wait until after the Christmas cookie explosion that is about to happen in my kitchen. In the meantime something quick small seemed more appropriate.

This cake has just the right amount of peppermint.  A little bit of peppermint extract goes such a long way, so I was happy to have an excuse to use a touch to justify the bottle in my cabinet.

It also gave me a chance to break out the snowman mugs Little Dude and I painted together last year.  The giant mug was bigger than necessary for the recipe, but I don’t regret the decision one bit.

I love how quickly the batter came together. The ingredients are simple and because the butter is melted they stir together easily with a spoon.

Added bonus: It smells delicious while it cooks.  Luckily it takes almost no time from the moment you grab a mug from the cupboard to the time it’s ready to eat.

It is almost immediate gratification. So you don’t have to suffer through it smelling yummy for too long.

The white chocolate adds a certain creaminess to the warm cake. It would be fabulous as it is, but I added a dollop of whipped cream, a drizzle of chocolate and a sprinkle of crushed candy canes to mine.

The toppings made the cake feel extra indulgent and tasted so good. A scoop of candy cane ice cream would be an out of this world embellishment as well.

Now I am thinking I need to try all of the mug cakes in the book for the sake of comparison. You know I can’t just assume this one is the best without doing the proper research!

Ingredients
 

  • 2 Tablespoons salted butter
  • 2 Tablespoons granulated sugar
  • ¼ teaspoon vanilla extract
  • ¼ teaspoon peppermint extract
  • ¼ cup all purpose flour
  • ¼ teaspoon baking powder
  • 3 Tablespoons whole milk
  • tablespoons white chocolate chips

Instructions
 

  • In large mug, melt butter in microwave for 30 seconds.
    2 Tablespoons salted butter
  • Add the sugar and extracts, stirring to combine. 
    2 Tablespoons granulated sugar, ¼ teaspoon vanilla extract, ¼ teaspoon peppermint extract
  • Stir in the flour and baking powder next.
    ¼ cup all purpose flour, ¼ teaspoon baking powder
  • Add 2 Tablespoons of milk and stir until smooth. Add the remaining milk and stir until incorporated. Gently stir in the chocolate chips.
    3 Tablespoons whole milk, 1½ tablespoons white chocolate chips
  • Microwave on high until there is no more batter sitting on the top of the cake, about 2 minutes. Let cool 1-2 minutes before enjoying.
  • Garnish with whipped cream, crushed candy canes, chocolate sauce or ice cream if desired.
