Skillet Corn with Parmesan Cheese

This creamy savory corn side dish is quick and easy to make and it goes with just about anything. Make it a regular addition to your dinner menu.

Coming up with interesting side dishes is always the most challenging part of planning a menu. This skillet corn has the perfect amount of creaminess with a hint of Parmesan cheese to up the savory value.

It is perfect alongside almost any entrée and comes together in a jiffy. It’s a great way to get your family to ask for seconds of the vegetable!

Dinner is always more fun and interesting when there is a wide variety in the menu. It keeps everyone more excited when it is always something different on their plate.

For me, keeping a variety of entrees on the menu is easy. I always have more ideas than I do time to make them.

It’s the side dishes that I struggle with.  I am less likely to plan them out ahead of time and more likely to go to a boring standby.

With super soft, delicious homemade Hawaiian rolls baking in the oven and braised pork chops cooking in the electric skillet, I knew I needed to come up with a vegetable. I’ll admit it was tempting to just warm up a frozen veggie in the microwave and call it a day.

But it was going to be served with such delicious items, I wanted something a little more special.  I like making varieties of skillet corn and that seemed like a perfect accompaniment for what seemed like such a cozy meal.

So I quickly whipped up a batch of creamy corn. Instead of adding a pinch of sugar to accentuate the sweet of the corn, I decided to give it a more savory spin.

Adding a little Parmesan cheese adds such depth of flavor. It’s that salty umami that takes the dish to the next level.

I wrote the recipe with butter because that is something most people have. If you keep a jar of bacon grease, try using that instead!

Either way you will end up with a fabulous side dish that your family will be happy to eat. So much so they won’t even mind if you start making it on repeat!

Ingredients
 

  • 3 Tablespoons butter
  • 16 ounces frozen corn
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ½ cup water
  • 1 Tablespoon all-purpose flour
  • ¼ cup milk
  • 3 Tablespoon grated Parmesan cheese

Instructions
 

  • Melt butter in skillet over medium heat. 
    3 Tablespoons butter
  • Add corn, salt and pepper and toss to coat. 
    16 ounces frozen corn, ½ teaspoon salt, ¼ teaspoon ground black pepper
  • Pour water over corn and simmer for 15 minutes, stirring occasionally.
    ½ cup water
  • Reduce heat to low. Stir flour into milk and pour over corn.  Cook, stirring frequently until thickened.
    1 Tablespoon all-purpose flour, ¼ cup milk
  • Remove from heat and stir in Parmesan cheese. 
    3 Tablespoon grated Parmesan cheese

Thanks for sharing. Sides are always an afterthought in my house! My go to side lately is fried "candied" green beans. I fry frozen green beans in butter and peanut oil until they get nice and brown. Then I dissolve brown sugar in a little beef or chicken broth (or water if I don't have any open broth). I turn down the heat and add the brown sugar solution. Heat and stir until the sugar solution is incorporated onto the beans. My husband and son fight over who gets to finish these off. Sometimes I throw in some onions and/or bacon with the beans while I am frying them for a little extra flavor
