Treats shaped like birds nests made out of chocolate, peanut butter and crunchy chow mein noodles filled with pastel candy eggs on pink platter.

These cute chocolate and peanut butter nest cookies are a perfect spring treat. Fill them with jelly beans and chocolate eggs for that extra colorful touch.

They are an Easy Easter treat or a cute touch for a baby shower. It just takes a few minutes to put them together and there are several fun ways to switch them up to match your tastes.

Our family absolutely loves fun nest treats when spring comes around. We have been making our favorite marshmallow and peanut butter nests for basically my whole life.

Little Dude and I recently made a YouTube video of us making them. We bought a ton of chow mein noodles and current circumstances meant we had fewer people to share them with.

Some Facebook friends asked if I thought it would work to add chocolate to the mix. That got the wheels turning.

So I grabbed a bag of crunchy chow mein noodles and some chocolate chips and went to work.

While you could probably shape them with your hands the way we do the marshmallow version, it seemed like that would be extra messy. So I used a cupcake tin to help form the nests.

It worked pretty well and made the whole process pretty easy. They were done in almost no time at all!

I used a mix of semi-sweet chocolate chips and salted caramel chips along with the peanut butter for our nests.  If you don’t have salted caramel chips, peanut butter or butterscotch chips would be great substitutions.

In fact, you could just use a mix of those “blonde” chips and leave the chocolate out if you’d like tan nests instead of the darker chocolate ones. Have fun mixing to get the flavor and color you would like.

The nests come out of the cupcake tin pretty easily. Just be sure to spray the wells before you fill them.

I used a spoon to fill them half to 2/3 full. Then push some of the filling out of the middle and up the edges to form the nest.

The well doesn’t have to be super deep and the shape doesn’t have to be perfect.   That’s part of the beauty, they are all a little different.

Once they are set, use a thin plastic knife to help pop them out of the wells. Mine came out pretty easily with a little twist.

Fill them up with your favorite candy eggs to complete the look. They are ready to eat in almost no time, but can be stored for several days or longer without issue.

These sweet chocolaty no bake treats look like birds nests but taste like haystack candies. They are quick and easy to make and perfect for spring and Easter.
Prep: 15 minutes
Cook: 3 minutes
Total: 18 minutes

Equipment

Ingredients

  • 12 ounce bag semi-sweet chocolate chips
  • 10-12 ounce bag salted caramel chips or flavor of choice
  • ¾ cup peanut butter
  • 12 ounce bag chow mein noodles
  • egg candies

Instructions

  • In a large glass bowl, melt together the 12 ounce bag semi-sweet chocolate chips, 10-12 ounce bag salted caramel chips and ¾ cup peanut butter.  Start with a 45 second burst in the microwave and then do 20 second bursts, stirring well between each trip to the microwave.  Stop as soon as it stirs smooth to avoid scorching.
  • Stir in the 12 ounce bag chow mein noodles
  • Spray 24 cupcake wells with cooking spray.  Fill each one 1/2 to 2/3 full with the chocolate covered chow mein noodles.  Use a spoon to gently nudge the noodles up the side of the tin leaving a small well in the middle.
  • Allow to set most of the way before removing them from the tin.  I used a thin plastic knife to loosen them.
  • Allow the to set completely then fill with candy eggs.

Notes

Feel free to mix and match any combination of baking chips you’d like. Butterscotch, peanut butter, or milk chocolate would all be good too.
