Cinnamon Sugar Quick Bread Recipe

This quick bread is loaded with cinnamon sugar goodness. It’s like a coffee cake in loaf form and is great for breakfast or a simple snack.

Start your day off with something delicious! This cinnamon sugar bread comes together quickly with ingredients you are likely to have on hand.

Plus there’s no yeast so you don’t have to wait for it to rise. It is perfect with a cup of coffee or tea and even better when shared with family or friends.

Little Dude and I have been having the best time making cooking videos to share on YouTube and Facebook. He is quite the internet celebrity in our small circle.

So folks have been offering him suggestions of things to make. One asked for milkshakes, so we whipped up some fruity pebble milkshakes complete with a rimmed glass.

Then came a request for cookies and cream milkshakes so of course we whipped them up as well. Drinking all of these fabulous milkshakes is a sacrifice we are willing to make for you! 😉

But we were definitely excited to get a request for something other than a milkshake, cinnamon bread!  I have fond memories of a cinnamon swirl my mom baked when we were kids.

I believe it came in a mix and it was really tasty.  So I wanted to recreate that type of experience with ingredients I always have on hand, no mix required!

Luckily quick breads like this are super simple to make, so the scratch version doesn’t take a whole lot longer than the boxed version. Plus you get that extra satisfaction of knowing you did it all yourself.

Keeping that ease in mind, I wanted both the process and the ingredients for this recipe to be super simple. Using oil is one example of that, you don’t have to think ahead and have softened butter.

Plus there’s no need for buttermilk or any other ingredients you don’t always have.  And while I’ve always been intrigued by that Amish friendship bread, I’m not ready to make that kind of commitment to a starter right now.

This bread turned out perfect.  It is delicate and moist. There is plenty of cinnamon goodness in the ribbon through the middle and baked on top.

Speaking of which, this bread smells amazing while it bakes. Just imagine it, the aroma of sweet cinnamon vanilla wafting through the house…

Having a slice for breakfast makes the day feel special. It’s like serving a smile for breakfast which helps get things off on the right foot.

We actually baked up two loaves. We kept one for ourselves and sent one to daycare with Little Dude.

That way his friends could try some while they watched the video of him making it.  It’s the next step up from smell-o-vision!

Storage

If you are going to enjoy the whole loaf within a couple days of baking it, just store it in an airtight container on the counter.

If you baked an extra loaf, good for you! Wrap that baby up in some plastic wrap then slide it in a freezer bag. Your loaf will stay good for up to three months in the freezer.

If you have a few slices you’d like to save, wrap them individually in plastic wrap. Put the wrapped slices in a freezer bag and pull one out when you’re hungry. A few seconds in the microwave will have it as good as new!

Cinnamon Sugar Quick Bread Recipe

This quick bread is loaded with cinnamon sugar goodness. It's like a coffee cake in loaf form and is great for breakfast or a simple snack.
Prep: 10 minutes
Cook: 45 minutes
Total: 55 minutes

Ingredients 

  • ¼ cup light brown sugar packed
  • 1 cup granulated sugar
  • 3 teaspoons ground cinnamon divided
  • 2 cups all purpose flour
  • 1 Tablespoon baking powder
  • ½ teaspoon salt
  • 1 egg
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • cup vegetable oil or other neutral flavored oil

Instructions 

  • Preheat oven to 350°F and grease a 9x5x3-inch loaf pan.
  • In a small bowl, stir together brown sugar and 2 teaspoons cinnamon.
    ¼ cup light brown sugar
  • In a medium bowl, stir together granulated sugar, flour, baking powder, salt and remaining teaspoon of cinnamon.
    1 cup granulated sugar, 2 cups all purpose flour, 1 Tablespoon baking powder, ½ teaspoon salt
  • In a larger bowl, mix together egg, milk, vanilla and oil.
    1 egg, 1 cup milk, 1 teaspoon vanilla extract, ⅓ cup vegetable oil
  • Add the flour mixture to the milk mixture and stir until just combined.
  • Spread half of the batter on the bottom of the greased loaf pan. Sprinkle half of the cinnamon sugar mixture over the top.
  • Add dollops of remaining batter to cover the cinnamon sugar, than top with remaining cinnamon sugar.
  • Bake for 45 minutes, or until a toothpick inserted in the center comes out clean. 
  • Cool in the loaf pan for 10 minutes, then turn out onto a wire rack to cool completely.
  • Slice and serve at room temperature or slightly warmed in the microwave.
