Start with a chocolate cake mix, graham crackers and marshmallows and end up with a delicious and easy dessert! The fudgy cake layer and toasted marshmallows are melt in your mouth good and the graham crackers help hold it all together just like in a real s’more.

You’ll find these bars are a great way to serve perfectly golden marshmallows to a crowd without standing in the smoke.

We have been focusing on extra easy recipes lately.  With everything going on, our days feel even busier than normal.

My motivation has also been at an all time low. But that doesn’t mean we can’t eat yummy food anyway.  

It just means we are relying on a few more shortcuts than normal.  Which I think is permission we all should be willing to give ourselves every now and again.

Don’t worry, it doesn’t mean we’ve devolved into only eating desserts. We are eating real meals too.

We are treating ourselves to a little extra comfort food. Luckily our CSA will be starting up soon so our fresh vegetable consumption is about to take over the dinner table.

All of that to say this recipe is super quick and simple. Using a cake mix means you just need to grab a few ingredients, a bowl and a spoon.

You can be digging in within a half hour. In fact, with a little help getting it in and out of the oven, even small children could make these by themselves.

Tips and Tricks:

I like to line my pan with aluminum foil before using it. That way you can lift the bars out of the pan to cut them. It is not 100% necessary, it’s just my preference.

 The easiest way to line the pan with aluminum foil is to flip the pan over and wrap the foil around the outside first. Then slide it off and fit it inside the pan. I tend to get fewer wrinkles and cleaner corners that way.

I have found the easiest way to cut these bars is to take a big knife and apply even downward pressure. It makes nicer cuts that trying to drag a knife across the bars and through sticky marshmallows.


Store the bars in a single layer in an airtight container at room temperature. If the marshmallows start to dry out after a couple days, refresh your piece by putting it in the microwave for a few seconds.

You’ll be back to gooey sweetness in no time!

Ingredients
 

  • 8 graham crackers
  • 15.25 ounce chocolate cake mix
  • 2 large eggs
  • ½ cup vegetable oil or other neutral flavored oil
  • 10 ounces marshmallows
Makes: 9 x 13inch rectangle

Instructions
 

  • Preheat oven to 350°F. If desired, line a 9×13-inch pan with aluminum foil. Spray with nonstick spray.
  • Place graham crackers on the bottom of the pan to form a base.

  • In a medium bowl, stir together cake mix, eggs and oil until just combined. Dollop over graham crackers and spread to form an even layer.
    15.25 ounce chocolate cake mix, 2 large eggs, ½ cup vegetable oil
  • Bake for 10 minutes. Remove from oven and distribute marshmallows over the top of the chocolate layer.
    10 ounces marshmallows
  • Return to oven and bake for an additional 5-6 minutes or until the marshmallows reach your desired level of doneness.
  • Allow to cool for at least 10 minutes before slicing and serving.
