Homemade Strawberry Sherbet

Turn fresh or frozen strawberries into a tasty homemade sherbet with just four simple ingredients. The berry flavor really shines through in this refreshing dessert.

Strawberries are really the shining star in this frozen treat.  Sherbet is the perfect balance between lots of fruit and just enough dairy to give you a creamy texture.

It is the perfect way to cool off on a hot day. Luckily it takes very few ingredients so you’ll be churning away in no time!

The boys at my house are huge sherbet fans. If they end up at the grocery store together there is a good chance they are coming home with at least one container of sherbet.

Sometimes they come home with two under the guise that they couldn’t agree on a flavor. Somehow they are always both able to enjoy both kinds once it makes its way home though.

 With our strawberry patch giving us tons of delicious berries right now, they were very adamant that some got turned into a frozen treat. They originally requested sorbet, but we just made a refined sugar free strawberry orange sorbet not too long ago.

 Ice cream was tempting but that would take a trip to the store to get some cream. I hate going to the grocery store to grab one item.

 So we settled on the in between and I’m sure glad we did! Besides the strawberries it only takes three ingredients and they are items that we always have on hand: sugar, lemon juice and milk.

This sherbet does freeze relatively solid due to the high fruit content and low fat content.  I promise you it is absolutely delicious though.

 If you want a creamier final texture, use half and half in place of the milk. Either way it is absolutely worth making.

I had a feeling this one would be a winner in my house, my boys love frozen treats. It certainly was! We are planning to make another batch this weekend before our homegrown strawberries are done.

We served our sherbet with the tender and delicious fresh strawberry Bundt cake.  I also had a little strawberry puree mixed with a splash of lemon juice and a bit of powdered sugar to spoon over the top.

What is the difference between sherbet, sorbet and ice cream?

Sorbet is dairy free. It uses just fruit and sugar to make a sweet frozen dessert.

Sherbet adds in some milk, so it is a little bit creamier than its sorbet cousin.

Ice cream requires the use of cream, it technically must contain at least 10% milkfat. The extra cream gives it that smooth mouthfeel and rich creaminess that we all have come to know and love.

Can I make other flavors of sherbet?

Of course! We have a recipe for key lime sherbet that is really delicious. But you can also start with this base recipe and substitute any kind of berry. Raspberries, blueberries, blackberries or even a mix of them all would be delicious.

Strawberry Sherbet

Turn fresh or frozen strawberries into a tasty homemade sherbet with just four simple ingredients. The berry flavor really shines through in this refreshing dessert.

Total: 3 hours 45 minutes

Ingredients 

  • pounds strawberries
  • 1 cup granulated sugar
  • 1 Tablespoon lemon juice
  • cups whole milk or half and half

Instructions 

  • Clean and hull the strawberries.
    1½ pounds strawberries
  • Process the strawberries, sugar and lemon juice in a food processor or blender until they are smooth. If desired, strain out the seeds and pulp, squeezing through as much of the juice as possible.
    1 cup granulated sugar, 1 Tablespoon lemon juice
  • Stir in the milk.
    2¼ cups whole milk
  • Add to your ice cream maker and freeze according to your ice cream maker’s directions.
  • When the ice cream maker is finished, transfer to a storage container and freeze for at least 3 hours.

    I was very pleased with how easy it was , I would use fresh berries next time. It was more difficult to puree frozen than I expected. Don’t need to buy anymore small appliances.

    1. Frozen strawberries can be a lot to puree. Fresh works great, or you could just defrost them a bit first.

    This works great with raspberries too! I could not seem to easily find a raspberry sherbet so I took this one & just swapped out the berries. It turned out fantastic! Love it! I great way to use up some berries before they turn.

    This sherbet is amazing! My previous strawberry ice cream recipe was good, but after the first batch of this I’ll never go back. I use 1 quart of half and half and the flavor is great, the texture is great. Made a batch last night and making popsicles with a new batch today. Thank you for a great recipe!
