Smoked Bacon Wrapped Pork Loin

Use your pellet grill to make this tender, juicy smoked bacon wrapped pork loin. It is really easy to put together and is sure to be the star of your meal.

Succulent pork loin is a perfect way to get dinner on the table. Wrap it in bacon and throw it on the smoker to make it even more special.

It only takes three simple ingredients and a few minutes to put together. Then, put it on the pellet grill and let it do the work for you.

(Don’t worry, I included grilling instructions if you don’t have a pellet grill!)

This is the perfect meal to serve guests, or make it as a special dinner for your family. Either way, it is sure to be a hit!

Getting Tender, Juicy Pork

If you’ve had a bad experience with dry chewy pork in the past, let me promise you it doesn’t have to be that way.

We’ve all had that experience where it was overcooked to the point of having the texture of shoe leather. It is perfectly safe to cook your pork to an internal temperature of 145℉, and it will be so much juicier and tastier!

Your tastebuds and your chompers are going to appreciate it if you start using a meat thermometer and follow this advice. A slight blush of pink is safe, tender, and delicious!

If you keep an eye on it and pull the pork loin out of the electric smoker as soon as it gets in that area, you are well on your way to really tender meat.

Because bacon is better a little more done, I like to take the pork loin off the smoker as soon as it hits that medium-rare mark. Then I put it under the broiler for a couple of minutes to crisp the bacon.

That keeps the pork loin nice and tender and makes the bacon perfect, too. The hardest part is letting it rest for 10 minutes before slicing.

Resting is important to let the juices redistribute. If you cut into it too soon, those yummy juices will spill onto the board rather than staying in the meat where they belong.

Making it a Meal

We served our pork loin with scalloped corn and some roasted green beans. We all loved the meal and went back for seconds.

Of course, you could serve yours with whatever sides you like best. French onion cheesy potatoes are always popular or some Instant Pot mac and cheese.

You could save a couple of pieces of bacon and toss them in with pan roasted brussels sprouts for another yummy veggie. Or try cheesy onion casserole for something decadent and delicious.

Smoked Bacon Wrapped Pork Loin

Smoked bacon wrapped pork loin is easy to make on your pellet grill. This three ingredient recipe takes almost no effort. The waiting is the hardest part.
Don't worry if you don't have a pellet grill, I have included grilling directions too!

Ingredients
 

  • 3-4 pounds pork loin
  • 1 pound bacon
  • 3 Tablespoons rub

Instructions
 

Pellet Grill Instructions

  • Preheat pellet grill to 250℉ and soak toothpicks in water.
  • Generously season all sides of the pork loin with your favorite rub or spice mix.
    3-4 pounds pork loin, 3 Tablespoons rub
  • Wrap the pork loin in strips of bacon, securing the bacon with toothpicks as you go.
    1 pound bacon
  • Put in center of pellet grill and cook for about 2½ hours, or until the center reaches 145℉.
  • Move to sheet pan. For crispier bacon, place under the broiler for 2-3 minutes.
  • Let rest 10 minutes before slicing and serving.
  • Store leftover in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.

Grill Instructions

  • Soak skewers or toothpicks in water.
  • Generously season all sides of the pork loin with your favorite rub or spice mix.
    3-4 pounds pork loin, 3 Tablespoons rub
  • Wrap the pork loin in strips of bacon, securing the bacon with toothpicks as you go.
    1 pound bacon
  • Sear over high heat (direct flame) on both sides.
  • Turn off one side of the grill and bring the other down to a medium flame.
  • Cook over indirect heat (keep meat on the side that is off) for 45 minutes then flip over.
  • Cook another 45 minutes over indirect heat, or until the center reaches 145℉ or your desired doneness.
  • Remove from grill and tent with foil for at least 10 minutes.
  • Slice and serve.

Notes

Use your favorite rub. We like to use either a BBQ rub or Jerk seasoning. However, there are so many flavors that would be fabulous. Mix and match your favorite spice blends.
