Soft and delicious corn casserole, also known as corn pudding, is a family friendly and filling side dish. It is perfect for the holidays, served with BBQ, and so much more.
Jiffy corn casserole is a simple side dish that most everyone loves. It’s a little bit like cornbread but more moist and soft.
That is where it gets the pudding part of the name. It can be cut into pieces, but barely.
It is almost like a corn spoonbread. It is sweet and savory, luscious and delicious.
We enjoy it with BBQ most frequently, but it’s also delicious with roast chicken, pork chops, or almost any comfort food. It is also right at home on the table with your Thanksgiving turkey or Christmas ham.
Why You’ll Love This Recipe
It is easy to make with the help of Jiffy Corn Muffin Mix. Who doesn’t love a good doctored up Jiffy cornbread mix recipe?
The recipe only takes 6 ingredients to make, 8 if you count the salt and pepper. And most of them are dump and stir, there is almost no measuring involved.
It doesn’t get much easier than that!
Jiffy corn pudding only takes one bowl and one pan to put together. There is no fancy equipment required and there are very few dirty dishes to mess with.
The batter takes just a few minutes to put together. If you can melt butter and stir, you can make this yummy corn pudding recipe.
How We Enjoy This Corn Casserole
The corn casserole was a great side dish with the corn flake crumb chicken, but would also be great with ham or pulled pork and ribs!
This particular day we enjoyed it with baked bbq chicken and some roasted green beans. It is good with so many things.
MiMi always makes a double batch of corn casserole when we have it at her house. A 9×13″ pan is a much better size when my brothers are around!
You can easily do that two. Just click the 2x button in the recipe card below and use the bigger pan.
You won’t be sorry to have more. Hopefully that means you might have some leftovers to enjoy for later.
When I am cooking for just myself, my husband, and Little Dude, a 8 inch square pan is plenty. We get enough for dinner and some leftovers too.
Little Dude stakes an early claim on the leftovers. He will usually request some as a snack after the first meal.
Come to think of it, I may need to start making that double batch as well. It’s too good to hand over all of the leftovers like that!
