This roasted shrimp is kissed with the citrus goodness of key lime juice. Dip them into lime butter for an extra special treat. They are like taking a bite of Florida.
Roasting shrimp is a quick and easy way to get them on the table. Add a spritz of key lime juice and you are really in for a treat.
They are tasty on their own, but make a little key lime butter for dipping to take them to the next level. You will be licking your fingers as you go!
Of course shrimp and lemon are a classic combination. We absolutely love making lemon roasted shrimp.
But, we enjoy the lime so much in the avocado and shrimp crostini, we thought it would be fun to take these shrimp on a trip to the Florida keys. The almost floral key lime juice added such great flavor and the key lime butter is unbelievably simple but good.
Of course I still had to serve cocktail sauce for Little Dude. “Shrimp and sauce” is one of his favorite foods.
A slice of no bake key lime pie would be a great way to end the meal. We love that recipe because you don’t use cool whip. It’s almost like a super creamy no bake cheesecake.
Simple Key Lime Roasted Shrimp
Ingredients
Shrimp
- 2 pounds raw shrimp deveined
- 2 Tablespoons extra virgin olive oil
- 1 Tablespoon Key lime juice
- salt and pepper
Lime Butter
- 3 Tablespoon butter
- 2 teaspoon key lime juice
- 4 dashes hot sauce
- 1 pinch salt
Instructions
Shrimp
- Preheat oven to 400° F and spray two rimmed baking sheet pans.
- Toss the shrimp in olive oil, key lime juice and a generous sprinkling of salt and pepper. Let sit for about 5 minutes.2 pounds raw shrimp, 2 Tablespoons extra virgin olive oil, 1 Tablespoon Key lime juice, salt and pepper
- Spread shrimp over prepared pans.
- Cook for 5-8 minutes or until pink. Be careful not to overcook them.
- Serve warm or place in the refrigerator to serve as cold shrimp cocktail.
Dipping Butter
- Melt butter and stir in remaining ingredients.3 Tablespoon butter, 2 teaspoon key lime juice, 4 dashes hot sauce, 1 pinch salt
- Peel shrimp, dip and enjoy!

We made this last week and it was delicious! So easy and not much clean up, winner winner! Served it with coleslaw, Red Lobster biscuits that I found in the frozen bread section.

It really makes them! Little Dude still wanted cocktail sauce, "shrimp and sauce" is one of his favorite foods, but my husband and I couldn't stay out of the lime butter!
