Kielbasa Casserole With Noodles & Broccoli

This cheesy kielbasa casserole recipe is hearty and delicious. It has broccoli and egg noodles baked in a yummy sauce making it a whole meal in one. Plus, it comes together quickly and can be prepped ahead of time for a tasty family dinner.

It is quick to assemble and can even be put together ahead of time.  It has all of the major food groups baked right in. It has enough cheese and sausage to make the whole family love it.

Finding easy dinners that the whole family loves can really be a challenge sometimes.  Especially while maintaining our busy schedules.

Even though we haven’t been leaving home much lately, the clock still seems to be ticking down each evening.  So having some easy options in your recipe box that can deliver a tasty meal without a ton of work is always a good thing. 

This recipe is made from ingredients that are easy to keep on hand.  We almost always have a bag or two of egg noodles in the pantry.

In a pinch you could even use another shape of pasta.  Shells would be fun or rotini would work great as well.

We also always have frozen broccoli in the freezer.  I know that it seems to be one of those vegetables people love to hate, but my family loves to love it… especially if there is cheese involved!

If you don’t have chicken stock, don’t despair. Using water and bouillon works well, or even better get yourself a jar of chicken soup base. 

Kielbasa is such a great addition to any meal.  It adds so much flavor and keeps well.

Make Ahead Instructions

If you know you are going to have a busy evening, feel free to assemble this recipe ahead of time.  Get it all together to the point where you would put it in the oven, then cover and refrigerate it.

When it is time to get it in the oven, just place the casserole dish on the counter while the oven preheats. This will give it a chance to take a little of the chill off before it bakes.

Then just add five to ten minutes to the bake time.  It won’t take too much longer.  Just make sure the sauce is bubbly and the cheese is all melted and you should be good to go.

Cheesy Kielbasa and Pasta Bake

This yummy casserole has all of the good stuff, pasta, broccoli, kielbasa sausage and plenty of cheese.  It comes together quickly and can be prepped ahead of time for a tasty family dinner. 
Prep: 10 minutes
Cook: 30 minutes
Total: 40 minutes

Ingredients 

  • 8 ounces egg noodles
  • 3 Tablespoons butter
  • 1 diced onion
  • ¼ cup all purpose flour
  • cups chicken broth
  • ¾ cup milk
  • salt and pepper
  • 16 ounces Kielbasa
  • 12 ounce package frozen broccoli florets thawed
  • 1 cup shredded cheddar cheese
  • 1 cup shredded provolone cheese

Instructions 

  • Preheat oven to 400°F.
  • Cook 8 ounces egg noodles according to package directions to al dente. Drain and place in a greased 9×13" pan.
  • Melt 3 Tablespoons butter in a saucepan. Cook 1 diced onion in butter until tender.
  • Add ¼ cup all purpose flour and cook for about a minute, stirring frequently.
  • Pour in the 1½ cups chicken broth while stirring. Once the flour is incorporated into the broth, add ¾ cup milk and cook until it begins to thicken, stirring frequently. Adjust the seasoning with salt and pepper to your taste (amounts will vary widely based on preference and which broth you use.)
  • Slice 16 ounces Kielbasa into 1” pieces.
  • Spread kielbasa and 12 ounce package frozen broccoli florets over noodles. Pour sauce over the top of the casserole.
  • Mix 1 cup shredded cheddar cheese and 1 cup shredded provolone cheese together and sprinkle over the casserole.
  • Bake for 20 minutes or until the sauce is bubbly and the cheese is melted.

Notes

If you don’t have provolone cheese, mozzarella is a good substitute.

  3. I’m wondering if I can double the sauce as it doesn’t seem to be saucy enough when I watched the video. What are your thoughts? I’m making this tonight, so I’m curious. Thank you.

    1. I don’t see why not. It may end up a little bit soupy, but I would think the pasta will help soak up some of the extra liquid.
